    I have one suggestion, you add salt to tomoto before drying, when you will add salt, lots of juice will come out, keep it 5 to 12 hours
    you pass it through filter, drain the water and let it dry the process will become easier and smooth. In India we make lots of sundried pickle, we add salt and turmeric and remove juice from fruits. After two days, we put spices. Please visit Arabic site how to sundry the tomato. They also add salt. Namh shivay.

    if you cut them into quarters and trim off the little bit of white in the middle, you can dry them out skin down, so all the flavour in the juice is drying into the flesh of the tomato. it takes a little longer, but they have a lot more flavour.

    FYI - Tomatoes dry much better when they are not touching each other and the quickest way is the car. We have trays of tomatoes in the car constantly and it usually takes only a day in our weather. I also leave some of the "jelly" inside the pieces for flavor and salt heavily. Store with basil, rosemary and olive oil.

    Yes, we've tried the car method too but our sunlight is more limited where we live so the drying time was more than one day. Ventilation to let the moisture escape without letting bugs into the car was a challenge for us. Also, because our climate requires an overnight dry cycle, the cooler evening temps without proper ventilation made some of the tomatoes start to go rancid instead of drying nicely. Would love to be able to dry a carload of tomatoes in one day! Great suggestion for climates that have longer, hotter days. Congrats on finding a cheap method that works for you and surely many others!

    I really like your idea of the fan. It so easy why didn't I think of that. Even tho I have a dehydrating machine I think this would help the process. Tks

    I did wonder about what happened to them at night . I certainly didn't think about the fan though. My first time drying tomatoes and the sun decides not to show up so I put them in the oven as I've seen on RUclips but I believe that defeats the purpose of the sun...sun dried....lol. I hope it comes out like it's supposed to...wish me luck!

    When you store them in olive oil... do you just fill the jar, remove air bubbles and put on a lid? Or is there a step to seal them for storing? How long will they store in oil? I assume they just go on a shelf or do they need refrigerated? Wonderful video - trying to learn how to do this myself - thanks

      We’ve just stored them in the olive oil, we’ve never refrigerated them, I haven’t had any problem storing them for at least a year, there are usually eaten up by then though. They are definitely a favorite. A bagel and cream cheese is one of our favorites.

    I have few questions regarding how to store them. Do you CAN them? like put hot oil uptil top and close lid so they can pop and air seal? Do you have any preservatives? salt, garlic, mustard seeds, citric acid are kind of natural preservatives. Why store bought are air sealed and full of artificial preservatives like nitrites and sulfitees?

    Can we use any type of tomatoes, besides Roma tomatoes? I’m growing Cherokee, Amish and cherry. Thanks for the information.

      I’ve used many different types of tomatoes and they all work. Roma have less water in them so there’s no doubt they’re easier.

      Yes, we just use it like you would a normal olive oil. It has some of the sun-dried tomato flavor, which I think is wonderful.

    Can you reuse Olive oil from one batch to next year's batch? Olive oil is kind of expensive!

      use sunflower oil...cheaper and has a fuller flavor.
