    Capers are a small pickled item you can get in any supermarket or delicatessen. I think they are a pickled seed and are used in many ways but in my experience they are mostly used in salads, dressing and sauces. They come in small jars either in brine, oil or vinegar.

      There really isn’t a replacement. Maybe if you chopped up the small gherkins you can buy at a delicatessens. Where about do you live?

    I made them some moisture still in some tomatoes is it ok as long as they are stored in the fridge??

      From many, many teaching videos, MUST be completely DRY before you place tomatoes in jar.
      It may take 5 - 10 days in the sun 🌞
      It all depends on your overall weather, the size, thickness of your tomatoes, etc.
      I've seen some videos where the person cuts the tomatoes in half, and the weather (heat) there was very, very hot & dry. Like
      semi-desert.

    Does this have to be sealed by placing jars in hot water bath. Or do you just refrigerate them.

      I guess you can, I'd advise filtering the vinegar first, to remove the seeds of the tomatoes :)

    Raw Garlic and olive oil is a recipe for botulism. How do we solve that ?

      Hi Mulata,
      To avoid botulism you need to sterilize well the jars and the tops as is shown in the video, in addition, we use white vinegar which is citric acid, which reduces the sprout of possible bacteria. Also, make sure that there are no air bubbles in the jars.
      It is difficult to guarantee 100% with homemade products, however, we never experienced botulism in all these years :)

      ​@loveheritagefood9979 100°C will not kill botulinum spores, which are more likely to be present on the garlic and parsley, which could also be treated with white vinegar (acetic, not citric acid). Storing at below 4°C will also prevent botulism.

      Hi Emelia, thank you for watching my video. You can definately use it in salads and sometimes there are used as an addition for sauces, however, I wouldn't use it to make a tomato sauce. 😊

      Hi Jiraporn,
      There are the small and the big capers, we use the small capers because are more delicate in flavour; if you can't find capers in your area, don't worry you can make the recipe with no capers. You could bake the tomatoes instead of sun dry, however, I am not sure about the final result and flavour, I've personally never done it! :)

      Salve Michele,
      Utilizzando l'aceto di vino Bianco andiamo ad acidificare il prodotto sfavorendo la germinazione delle spore e inoltre bisogna sempre assicirarsi che non ci siano bolle d'aria.
      Certo con i prodotti fatti in casa non si puo' garantire al 100%, pero' noi in tutti questi anni non abbiamo mai riscontrato questo problema.

      If you seal the jar properly it can last years. Another option is to freeze the dried tomatoes. That could last months as well. We use tomatoes all year but my favorite are the sun dried tomatoes. I can’t wait to get started. ☺️

    After 4 days 2 tomatoes had mould on them. I have done them before with no problem. Any ideas 😬

      The plant is called caper bush and is used as a seasoning. Peter is right, it's a small pickled and you can find it in any supermarket or delicatessen.

      @@loveheritagefood9979 Capers are a pickled flower bud. If you pickle nasturtium seeds when they are still green they can be used as a substitute for capers.

      Hi there, we use the salt to avoid moisture, it's a protection. In addition it helps the drying process getting rid of the liquids.
