  • In the food world, no topic is more controversial than pineapple pizza. But today, Andrew Rea-a.k.a. Binging with Babish-returns to Pizza Wars to do the impossible: Create a fruit-topped pizza so delicious it silences all of the haters (even himself). But will Andrew's al pastor-inspired "taco-pizza" be enough to beat out Nicole's pickled pineapple and Philly cheesesteak-smothered pie? Frank Pinello and Josephine Giordano must risk their reputations as "pizza purists" in order to judge this event and crown a winner.

Probably because it's absolutely delicious when used properly. 99 times out of 100 people who "don't like pineapple on pizza" have never tried it and just think it makes them cool to hate it. Pepperoni pineapple is fantastic and if you wanna add some black olives and or jalapeño that's even better.

      The key is a salty meat. If you could get a pancetta, or a slightly thickly sliced prosciutto, double-smoked bacon , the saltiness helps offset the powerful sweetness of the pineapple, (which gets even sweeter when cooked). The other solution is to lightly season the toppings just before serving with a little Fleur de Sel, or a smoked artisanal salt.

    Honestly pineapple on pizza is a favorite topping, so long as it's paired with ham, bacon, or some other really good pork product. Pairing with chicken or beef not so much. Pork and almost any kind of fruit pair really well. You get the saltiness from the pork going with the tang and sweetness of the fruit. So pineapple makes sense. The only other fruit I would even consider for pizza would be apple. I know it sounds weird but pair the apple with bacon, prosciutto, old forest salami, or some other thinly sliced preserved pork product and damn, it's tasty. Traditional by no means but if it tastes good to you, who cares?

    • @charliep9066
      @charliep9066 2 года назад

      Chicken works too, you just need to add acid and spice - banana peppers or pickled jalepenos. The acid and heat balance out the sweetness in place of the salty meat. Chicken has a very mild sweetness, but also a great texture against the pineapple. It's a common combination in Chinese and Thai cuisine. Pineapple chicken fried rice is delicious.

    Pineapple on pizza has only recently become "controversial". Hawaiian pizza was invented in the 1960s. I worked at a pizza place in the 90s and Hawaiian was one of our best sellers. Nobody complained about it until the 2010s, and now people won't shut up about it. Before pineapple became a modern meme, anchovies were the reviled pizza topping people talked about. Entertaining as always. However...
    I'm not a big fan of pineapple on my pizza but I'm also very confused, especially in times where chefs are putting pretty much everything and anything on pizzas, how pineapple maintains its god-like, meme-level status of inappropriateness. Particularly when considering what a common ingredient it is in savoury dishes all around the world.

    Thin slice the pineapple into rings and grill on low heat for a decent length of time before chopping into small pieces to scatter on the pizza. This caramelizes some of the pineapple making it sweeter and less acidic and desiccates it as well so that pineapple juice doesn't spread out onto the rest of the pizza during cooking.

    I never understood the dislike pineapple gets when associated with pizza. It's a great compliment to many different pizzas. Is it Italian, obviously not, but as an addition to an Italian pie, it can be very tasty when used with the correct toppings. 👍✌

    Al pastor is pretty easy to make at home, I just made it last night. Buy a boston butt, add spices like smoked paprika, jalapenos, cumin, mexican oregano, salt, and cilantro, add pineapple, and slow cook in a tagine or dutch oven at 325°F for about 6 hours. Can remove lid and flip meat for the last hour to get rid of excess water and brown the bottom of the meat. It is so freaking good.
