I'm so grateful that I learned to make savory oatmeal with Anne Esselstyn. I've had oatmeal with kale almost every morning since I learned that recipe. I had a small heart attack almost 10 years ago. I found Whole Foods Plant-based eating about 2.5 years ago. Since then, I've lost over 75 lbs., and the doctor has taken me off all heart medications. Greens, greens, greens... and they MUST be anointed with a good quality balsamic vinegar. :-) Thank you so much Esselstyn family!

@@nmccutcheon2243 Or use the kale stems in a veggie stock. I freeze them along with other veggie waste, throw them in a crock pot, add water, cook all day, cool, then freeze in quart baggies. My recipes have more flavor and nutrients than store bought broth!
Me neither!! I'm going to give it a try. Honestly, it sounds weird having only considered oatmeal a sweet thing. We eat them with berries and so that is at least healthy, but per Dr. E we are putting more greens in our diet so I'm all over trying it! Thanks so much ladies for this info!
Almost any greens are great steamed with turmeric and ginger. Take turmeric and ginger roots and shave thin slices off them with a peeler (or just chop up finely with a sharp knife) then sprinkle through the greens in the steamer. When they are cooked add a little soy sauce and a sprinkle of sesame seeds. Mmmm! If you don’t have fresh ginger and turmeric roots you could make a dressing with ground ginger, ground turmeric, cider vinegar, tahini and some crushed garlic. Greens taste great tossed in that after they come out of the steamer because it is all the same flavours.
Thank you so much for such a fantastic recipe(?)LOL, the best are just thrown together in a moment..I am definitely trying this immediately--Thanks again..
My favorite breakfast is toasted whole wheat bread spread with roasted sweet potato (from my weekly batch-bake) and a big handful of whatever greens I have handy. I spice it up with various seasoning blends and sometimes a little sriracha or vegan kimchi. Great start to the day.
I'm a huge fan of using raw collard greens (with the middle vein shaved close to the leaf) as wraps. I just julienne carrots, beets, green onions, beans, peppers and avocado/hummus and wrap it all up like a burrito. delicious
Ladies thank you so very much for my new oatmeal breakfast of 1 cup rolled oatmeal, and now I add a handful of chopped kale to my soy milk, 1 tblspn ground flaxseed, 1/4 cup chopped walnuts, 1/2 cup blueberries and sprinkled with Ceylon cinnamon 😋😋😋😋😋 My breakfast will never be the same😋😋😋let me reiterate my thanks to you, your lovely Mom and your dad Dr. Esselstyn for my new breakfast😄
Thank you! I'm so happy to see a video all about greens! One thing I didn't realize until recently (not sure why) is that cauliflower leaves are great to eat, too. :)
This was such a fun video. I learned a lot! It is tough to cover all the info needed - but I'd suggest some mention of washing up all those leaves. There can be dirt/grit that needs to be removed and managing the washing part is probably a video all in itself. It just comes down to a good routine.
Glad I'm not the only one who notice that they didn't wash the greens or even mention it. It seems that I spend a lot of time washing and drying greens so I often buy the packaged "triple washed" greens.
I find the mustard powder takes away from the lovely taste of the broccoli, or broccoli soup - so i just take 1/8 tsp of powdered mustard and wash it down with water, then eat the veg.
Romaine is good to roll various foods in for hand held munch! Have also seen people taken bottom part that was broken off, put in water and grow more romaine in their apts! Thank you so very much for the help I really can use it.
This is one of the most helpful videos I have seen on the how-to's of plant based eating. I have struggled and struggled to get enough greens every day. I am working to become a healthy plant based eater--after years of undereating vegetables and after years of almost no greens. Now I feel I have practical ways to incorporate the greens. But one thing...could you make a Greens, Greens, Greens! followup video with more ways to incorporate the greens on a daily basis (and sometimes to sneak them in)--and perhaps after that-- two or three more videos on exactly the same topic (actually as many videos as you want on the same topic). I say this because getting enough greens is clearly so critical, as Dr. Esselstyn emphasizes. It is so easy to be a vegan and sadly-- very unhealthy. Thank you again for this video--and for all your other wonderful videos!
I like all parts and I almost freaked out at that part of the video lol. Even when I'm chopping it up I have a habit of eating the chopped pieces of stalk lol.
AWESOME video, I've been growing so much Arugula, I put it in my salad, and, it's like a tonic for my tummy, no more heart burn, or nasty burp ups! thank you so much for sharing!
I put oat milk in the blender with two handfuls of spinach or whatever green I have on hand. Add Tumeric, pepper and cinnamon then pour over my oatmeal. I also LOVE beets. I slice them very thin and air fry them. They are crispy like chips and have a natural salty sweet taste.
Steam the greens, then drink the "green tea", don't throw it away, it tastes great and is loaded with vitamins, it can also be used in broths and soups
I finely grate cauliflower and put it liberally all over my green salads, It looks like rice, but has all the flavour and goodness you would expect and leaves more room on the plate for other delicious greens. If I use a sour lemon dressing, which I love, I will place a few small, sweet pineapple chunks in the salad, as well as some Japanese-style pickled ginger slices. These flavours burst in the mouth from time to time and make a lovely contrast to the sour of the dressing. I love these ladies. They inspire me every time I see them. Thank you.
Yet another fantastic video girls! Since I was not raised eating all these nutritious foods, I need all the education I can get on how the different types of greens look and how to prepare and cook them. Thanks for more tips on healthier eating! Thanks for all you do!
I streamed this a month ago on my television and couldn't remember the title of the video, butI had to comment.i see it is truly a family affair so awesome, just got my engine 2 rescue diet book, by Rip. You ladies are so enjoyable to watch. Your a great team. I wish me and my daughter had this wonderful together spirit. I appreciate the info. I will start eating more and many greens.
great tipps! My favorit ways of sneaking in vegetables are: 1. making a porridge without oats, just greated parsnips cooked in coconut milk with some spices and then topped with raspberries. 2. Mixing greated zucchini under overnight oats 3. chocolate beet cake 4. chocolate mousse made from avocado . . . . and my favorit dish that kinda hides greens is colcannon, mashed potatos with cabbage and leeks mixed into it
Cauliflower bechamel in lasagne! Break up a whole head of cauliflower and boil in a few cups of water then, when it's soft, blend it with a quarter cup of the water, quarter cup of plant milk and half teaspoon of nutmeg. Use as the white layers in lasagne. Delicious.
I'm an acid queen like Ann. That description of a kale-lemon-hummus sandwich made me crazy. Can't WAIT to try it. And I'm already bookmarking all the vinegars at The Olive Tap, thanks to Ann. 🥰
HERE is the list of greens that she said that was on her dad's t-shirt, bok choy, swiss chard, kale , collard greens, turnip greens , mustard greens, beet greens, napa cabbage, brussel sprouts, broccoli, califlower (which to me is not a green) , cilantro, parsley , spinach, arugula , AND asparagus hahaha..
Considered a green due to its plant family. Cauliflower is cruciferous vegetable, a plant family that includes arugula, bok choy, broccoli, Brussels sprouts, cabbage, collard greens, kale, radishes, turnips and watercress. It has a rich supply of nutrients comparable to its green-colored relatives in the cruciferous family.
I only recently started adding stalks from broccoli and stems from greens to my cooked or raw greens. But I wasn’t wasting them. I saved them along with other veggie scraps and onion/garlic skins for homemade veggie broth. Now I’ll use only half in the broth and add the rest to my main dish! Thanks!
Ann, I love the broccoli stem! Anytime I cut up broccoli for meals, I always save the stem for myself to eat while cooking. Maybe it’s weird, I don’t know, but I love it!
Thank you, Anne and Jane! Your videos are so fun and educational. You’re both refreshing and real in a sea of polished, plant-based RUclips’rs. Pls keep teaching!
Beautiful :) One tip for cooked spinach, or other greens, is instead of pressing it in a colander to drain it, press it in a potato ricer. The spinach remains intact but the water disappears quickly. It's perfect for casseroles or other dishes when you don't want excess moisture.
I really enjoyed your video, especially how you two sisters work together. I heard about your father from a friend that has cancer and has radically lowered his blood presure, but I had the question "HOW?" and your video helped a huge bunch. I'm going to watch more of them as I enjoyed this one very much. Thank YOU for continuing your dad's work, some of us might live better because of it.
I am also an acid queen....lol...enjoy all the various infused balsamics, lemon juice, lime, vinegars, etc. on my greens. Even love the old fashioned pepper sauce from the south, vinegar with peppers soaked in it...yummy! Due to health issues I have almost no stomach left, and cannot fit very large amts. of food into my body at a time. So, in order to eat plant based, I eat 5-6 small meals a day. And I do eat 2# greens a day. I also eat my daily oats...lol..( which I cook an entire weeks worth of oats in my pressure cooker on prep day ) .But on my prep day each week, I take some onion, sometimes some liquid smoke, depending on what I am making, or some smoked paprika. water saute the onions in this to give the greens a smoke flavor, then I put in a can of beans, type depending on what green I am cooking, then add a 1# bag of frozen greens, or fresh. Simmer until greens are tender, and divide it up into two servings. I make enough of this for two servings every day, and put into my fridge. I know not everyone thinks smoothies are good for you, but for me, it helps me get enough veggies, etc. down. I take two fruit servings, frozen, ( one serving is a frozen bananna ) 1/2# of supergreens I buy and actually just put the whole bag into freezer, and add just a bit of water, and make myself a frozen smoothie. I have a large thermos, and I sip on this throughout the morning. Then I prep 7- 1# bowls of salad greens, put a paper towel on top of the salad, put lid on and put into fridge upside down, the paper towel controlls the moisture, and the salad stays fresh for a week. I also make a salad bar in bottom of my fridge, and make marinagted veggies, beans, sliced beets, onions, carrotts, whatever looked good at grocery store, Put these into square shaped bowls, and inside one of those flatter TOTES containers like you get at walmart or target. I leave the lids off ( onions or other strong smelling veggies will need their own individual lids as well ) and put a pair of tongs on the box, put a lint free kitchen towel over the top, and put the big totes lid on top. It fits on the bottom shelf of my fridge. Every day, I take out my daily salad bowl, and my salad bar. I have a big wooden bowl, I put into the wooden bowl my daily 1# salad greens, and just pick and choose from my salad bar what I want inside. I then have a mezzalune knife, and I make a large chopped salad in the wooden bowl, using the mezalune knife that fits the round shape of the wooden bowl. Chopping the salad is tasty, and gets the volume down so I can handle it. Usually in divided servings with lunch and dinner. I eat other things, but this is how I get in my daily greens, and with my 12 hour work days, I just really depend on having the prep day each week. without the prep day, I find myself slipping and not doing well on my program. So for me it is essential.
Inspired! I'm going put tomorrow and going to take better care of myself and my heart because your enthusiasm is so contagious and your salad looks so delicious and who knew I could peel a beer that way!! Thanks!
I was just diagnosed with T2D. I happened to find your video by mistake. I want to thank you for saving my life. I am plant based, loosing weight and all because of your inspirational videos.
I eat a mix of veggies with my oatmeal every morning. I love to eat it savory with a mix of chilies, garlic and ginger that is minced and stored in a jar with rice vinegar and water. I add a spoon of the mixture and some soy sauce and it’s delicious. Glad to see Ann eats greens with her oatmeal. I steam up zucchini, green beans, kale, red pepper and store it in the fridge to add to the oatmeal in the morning. Love morning veggies!
Just FYI - soy sauce is an excitotoxin. It literally destroys brain cells. As does Braggs Aminos that people think is better. I use coconut aminos. No msg.
I make a big chopped green salad with all types of greens and with watercress and a bean-based dressing with tomato just before eating. At least 6 cups of salad every day.
Love your show. I've been trying dishes from the Engine 2, My Beef w/Meat, and Forks Over Knives cookbook, books for a while now. I'm slowly getting into this new way of eating. I'm 58, and my last physical, last Oct. said I was pre-diabetic. I can't get it out of my head when Essy says I'm destroying my endothelial cells, with the oil, the meats and the dairy. My kids laugh at me because I go around saying, "I can't eat that it's destroying my endothelial cells!" Keep up the great work you two do. When are you having your next chibo?
Stick with it and you will be thrilled that you did! I was in the same boat years ago and made the switch . And THEN I discovered all of the wonderful tasty plant based dishes!!! Omygosh!!! A whole new world opened up and I'll never go back. Plus I just FEEL SO DARNED GOOD!! Who knew?

I use a large bowl and chopper tool..’ like subway uses for their chop salads... throw in all the greens you like...perfectly massaged kale, etc... love it👌
I finally found how to cook okra without frying so it is not slimy & so I will like it. Slice the whole stem end off & compost it. Slice the okra longways in half. The next step is where I need Jane & Ann's help to eliminate the oil so it will not burn AND a replacement for the cheese. Toss with 1 teaspoon of oil for 2 cups of okra. Sprinkle parmesan cheese dried basil, onion powder & garlic powder & pepper & bake at 350 on parchment lined cookie sheet until lightly or more crisp. Thank you for ideas to make this more healthy.
I have a stem problem but I have autism with tactile issues. I've recently turned vegan, but I'm also a celiac with lactose intolerance. Meat was tearing my stomach up and I hated eggs. So I went vegan. I've lost 30lbs in 2 months! I feel like I'm having to eat more than I ever did though to get in enough nutrients. Thank you for this video! I'm looking for more ways to fix my veggies! I love how vegetables are starting to taste better to me now and I actually crave them!
When ann started getting mad about the broccoli stem, I started laughing. I do the same exact thing I just chop a little smaller so it still gets tender. Love it!

Great ideas as always. Could you also do a video on how to store greens. There are so many pictures on Pinterest and Instagram that are fancy beautiful with greens just laying loose in the fridge but realistically they don't last a day if they're not covered. I struggle with keeping kale and cilantro could you please do a video of how to store greens please.
Catfish Cut off a small bit of the cilantro stems then place into a jar or glass of water, cover with a plastic bag and store for weeks in the frig, especially if they were bought at the farmer's market and just picked fresh.
Such an enjoyable video! I eat greens once a day, but as a thin guy in his twenties slowly gaining some weight, I really don't think I could eat this much greens and still have enough space in my stomach to fill it up with enough calories!

@@nmccutcheon2243 Or use the kale stems in a veggie stock. I freeze them along with other veggie waste, throw them in a crock pot, add water, cook all day, cool, then freeze in quart baggies. My recipes have more flavor and nutrients than store bought broth!
I never thought of adding kale to my morning oatmeal! And I grew bags of it over the summer that are all in the freezer, thank you very much!
George Row ABSOLUTELY sounds delicious. Our family will be trying this! Thanks
@Taiwo Omotosho Peri peri sauce?
I love Ann’s anti-waste attitude! 👍
I need to start putting greens in my oat groats in the morning.
My favorite breakfast is toasted whole wheat bread spread with roasted sweet potato (from my weekly batch-bake) and a big handful of whatever greens I have handy. I spice it up with various seasoning blends and sometimes a little sriracha or vegan kimchi. Great start to the day.
Make sure your toast is whole grain or sprouted. It's a lot better for you than whole wheat.
Do you heat up the sweet potato and greens, or do you like to eat this breakfast cold?
Yummy! That would make a wonderful sandwich, too. Thanks! I'm always looking for a healthy sandwich for hubby's lunch. Thank you so much!
I'm stuffing my home-made burritos with dark leafy greens and eating a salad a day. Plus a breakfast smoothy...
I'm a huge fan of using raw collard greens (with the middle vein shaved close to the leaf) as wraps. I just julienne carrots, beets, green onions, beans, peppers and avocado/hummus and wrap it all up like a burrito. delicious
I do this too! I love it.
Wish collard greens were more available in my area. We only get them at specialty stores during the summer.
Ladies thank you so very much for my new oatmeal breakfast of 1 cup rolled oatmeal, and now I add a handful of chopped kale to my soy milk, 1 tblspn ground flaxseed, 1/4 cup chopped walnuts, 1/2 cup blueberries and sprinkled with Ceylon cinnamon 😋😋😋😋😋
My breakfast will never be the same😋😋😋let me reiterate my thanks to you, your lovely Mom and your dad Dr. Esselstyn for my new breakfast😄
Thank you! I'm so happy to see a video all about greens! One thing I didn't realize until recently (not sure why) is that cauliflower leaves are great to eat, too. :)
I missed that. I didn't know you could eat them! Thank you!
WFPB guru chefs.👍 my hero .
When coming from your own garden, you are doing yourself a favor by eating a little dirt. Grow your microbiome!
@@shaunaj905 I don't know--lots of animals doing a lot of things in my garden!
@@chyanneever3057 Yeah, but who wants to crunch down on grit?
I eat savory oats every single day. I add mushrooms, usually any greens i have in the frig, and nutritional yeast.
Thank you so much Ann!
Sulforaphane! Always chop your kale at least 45 minutes before steaming or cooking it! Love these ideas.
I find the mustard powder takes away from the lovely taste of the broccoli, or broccoli soup - so i just take 1/8 tsp of powdered mustard and wash it down with water, then eat the veg.
I learned that from Dr. Greger as well..
I've done this since learning from Dr. Greger, too!
Romaine is good to roll various foods in for hand held munch! Have also seen people taken bottom part that was broken off, put in water and grow more romaine in their apts! Thank you so very much for the help I really can use it.
I wish there was a "love" button for this video! Brilliant!
The stalk is my favorite part of broccoli!
Mine aswell! Such an intense taste, and it is much harder to over- or undercook the stem than the flower-part. I love it :).
Love broccoli
Yes, it's great! I peel it and eat it raw while waiting for the broccoli meal to finish cooking!
Right! it's the best part for dipping in hummus. So crunchy!
I like all parts and I almost freaked out at that part of the video lol. Even when I'm chopping it up I have a habit of eating the chopped pieces of stalk lol.
I have made dehydrated kale chips in the past. Time to get back into making them again
AWESOME video, I've been growing so much Arugula, I put it in my salad, and, it's like a tonic for my tummy, no more heart burn, or nasty burp ups! thank you so much for sharing!
The bitter taste is excellent for bile production/liver health/good digestion!
These two are a hoot! Thanks so much for this fun reminder to get our assortment of greens 🥬❤️✨
Good afternoon l eat green vegetables every day to keep me healthy and exercise and drink lots of water. You guys keep up the great work.
Steam the greens, then drink the "green tea", don't throw it away, it tastes great and is loaded with vitamins, it can also be used in broths and soups
veganmama fourgirls back in the day in the UK the gravy was made with veg cooking liquid.
I call it 'pot liquor' and I looooove it!
Drank a nice hot cup of turnip greens "pot likker" tonight after dinner. Soooo good.
Please explain how to get green tea by steaming greens?
Aren’t the vitamins killed from the heat?
Arugula is the best, my absolute favorite. It really has a nice kick to it. It also has insanely high levels of nitrates, much higher than beets.
Thank you.
pds002, You can cook for me anytime.
Want a sour lemon taste??? Use sorrel greens or Sumac powder!
pds002 May I ask whether you buy the pickled ginger or make your own? I’d love a recipe for this.
Yet another fantastic video girls! Since I was not raised eating all these nutritious foods, I need all the education I can get on how the different types of greens look and how to prepare and cook them. Thanks for more tips on healthier eating! Thanks for all you do!
What fun, you two cooking together!!!! Thanks for the inspiration!
I streamed this a month ago on my television and couldn't remember the title of the video, butI had to comment.i see it is truly a family affair so awesome, just got my engine 2 rescue diet book, by Rip. Been transitioning to plant based since 12/18/2019 and have lost 12 pounds basically standing still. I am really enjoying learning from all of you!Thank you! - Hope
You ladies are so enjoyable to watch. Your a great team. I wish me and my daughter had this wonderful together spirit. I appreciate the info. I will start eating more and many greens.
Great video! I make collard greens. Strip them, dice the stems then water saute with onion, garlic , and jalapeno. Finish with a little vinegar😃
There are lots of desserts you can make with steamed cauliflower, from chocolate parfait to frozen cake , it’s my favourite way of sneaking them in 😉
thanks fosr that reminder. I also love a puree of brocolli, cauliflower, and water for a lovely soup meal.
great tipps!
My favorit ways of sneaking in vegetables are:
1. making a porridge without oats, just greated parsnips cooked in coconut milk with some spices and then topped with raspberries.
2. Mixing greated zucchini under overnight oats
3. chocolate beet cake
4. chocolate mousse made from avocado
. . . .
and my favorit dish that kinda hides greens is colcannon, mashed potatos with cabbage and leeks mixed into it
Can you share the cauliflower cake recipe?
I just love you girls. You are a blessing to me. And Dr. Esselstyn you rock too!
"My Mom taught me how to strip" LOL!!! That's the kind of stripping I think I would be good at! Thank you both for sharing your wisdom and humor!
I love these two! Always joking around, and having fun! Thank y'all for your fun, and informational videos!
Broccoli stems are fantastic treats for my dogs too, they love them!
Kale stems, too! In fact, my dog loves all things cruciferous--except the leaves.
I love you two! You make me think of when I'm with my Sisters!! We all talk at the same time and finish each other's sentences!! GOD bless
Cauliflower bechamel in lasagne! Break up a whole head of cauliflower and boil in a few cups of water then, when it's soft, blend it with a quarter cup of the water, quarter cup of plant milk and half teaspoon of nutmeg. Use as the white layers in lasagne. Delicious.
Screenshot this for future reference, Thanks!
Wow. I have ever seen or heard this recipe before, trying tomorrow and yes def screenshot! TY
Wtf
thank you! That went by too fast and it was a little confusing since a few aren't greens. :)
I just love these two...so natural and lots of fun to watch.
I sprout a lot. One of my favorites is pea sprouts and beet sprouts. I was surprised that you did not add hand fulls to the salad.
I do the same 😂
Tereza Neubertová Great minds think alike 🙃
I peel the hard cover off and munch on the inner core raw. It’s good.
They are so good and I quarter them lengthwise for my dogs ....They also love raw bok choy 🐶🥦
Please do a storage video of all these beautiful greens 🥬 I am learning and need help keeping all of this fresh.
I love the passion you both have for eating greens 🥬 Greens are a wonderful food.
What’s a potato ricer?
Saute the spinach in olive oil, so tasty and no water to deal with :)
@@ReggieLouise, it's like a giant Garlic Press. It's used for making mashed potatoes quicker.
One of them is the mom!
It's mom and daughter not sisters
IMPRESSIVE, functional and efficient👋👋👋💫❤
Yep l also think the word impressive fits. Good job!
Inspired! I'm going put tomorrow and going to take better care of myself and my heart because your enthusiasm is so contagious and your salad looks so delicious and who knew I could peel a beer that way!! Thanks!
This has been one of my favorite videos - so useful and inspiring!
No msg.
Patricia Foster Thanks. I have coconut aminos. I will try it!
I am gluten free dairy free and have a hystamin intolerance so any thing with vegies is great
Watching these two interact is my favorite 😂
Same!!!!😆😆
I love to watch the dynamic between Jane and Anne. They are a fantastic duo. Makes me miss my mom.
I make a big chopped green salad with all types of greens and with watercress and a bean-based dressing with tomato just before eating. At least 6 cups of salad every day.
How do I make a bean based dressing? Thank you so much.
Who knew?
I've been seriously thinking about eating Plant foods, especially after 2 Hernia surgeries that almost killed me. After watching these 2 lovely sweet fun Ladies, I am convinced..
Cut the sugar and (processed) carbs and you’d be surprised how much better you’d feel!
I follow Dr. Esselstyn but I just found this channel. Thank you so much ladies for all the education! Your videos are wonderful.
I use a large bowl and chopper tool..’ like subway uses for their chop salads...
throw in all the greens you like...perfectly massaged kale, etc... love it👌
What a great idea!
Love you ladies and the bond you share, you make me giggle. Love WFPB, and the knowledge your entire family shares. Thank you bunches ❤❤❤
Love you two. Your mom is adorable! I want to eat more greens, just watching you two.
Halfway through the video and I must subscribe. Love it!
I always have cooked greens in the fridge ready for whatever! I love a littler dab of hummus on top!! Maybe a little diced red onion too.
I'm with Ann on the parsley...stems and all! Buy all colors of cauliflower and mix them together after prepping them. Enjoy raw throughout the week. ❤
Love it!
Loved loved your video! You ladies are fun to watch and enjoyed every bit of the show. I loved learning how to prepare greens, I’m gonna try that kale sandwich with lemons a lemon pepper on it with humus I can’t wait. Thank you ladies for I feel healed, healthy and Divinely Blessed!
This was most helpful. I definitely don’t get enough greens.
The two of you are a riot! Loved watching your video and you can tell your plant based eating gals...so much energy!
Catfish. Wrap them in paper toweling before you put them in the fridge.
Such an enjoyable video! I eat greens once a day, but as a thin guy in his twenties slowly gaining some weight, I really don't think I could eat this much greens and still have enough space in my stomach to fill it up with enough calories!
