Always enjoy your outdoor catch and cooks but this was a nice change up. Wouldn’t mind if you did more like this.
The chicken breakdown was fire and I also liked the sake descriptions.
If I ever own a restaurant, that’s how I want to treat my guest. That guy is so humbling and it looks like he treated both of you as if he has known you forever! Amazing. That’s respect.

I love the feel to this video, dispelling the stuffy chef personas. Yoya filleting the fish with the huge chef knife just like Taku. No, you have to have filet knife to fillet fish- if you know what your doing you can do it with any sharp knife. A true chef cook with what he has, not what the rules someone made up says.
Great video and as American as apple pie, a bunch of cool guys cooking up some good food. The Japanese community deserves our respect as a great addition to the American melting pot- or matsutaki rice pot. Mmmm looks so good…

The way he removes the legs and thigh, pulling at the end, also removes the oyster - Thank you for this technique!
Especially since whole chicken is less expensive if you know these tricks.
