Fruit Scones - Delicious and Simple

Traditional English afternoon tea scones. Easy to make, delicious to eat, especially with a little strawberry jam and clotted cream. Mmmmm
Ingredients
500g Plain Flour
1 tsp Salt
60g Sugar
3 Level Teaspoons Baking Powder (Do not confuse this with Baking Soda)
125g Butter Chilled & cubed into small cubes
80g Sultanas (Optional, leave out for plain scones)
1 Medium size Egg in a jug then make it up to 240g with milk. (Note use weight not a volume measure, this is important)
Instructions
I use a Food Mixer but you can use your hands if you prefer.
Place the Flour, Salt, Baking Powder and Sugar into the mixing bowl. Mix until mixed thoroughly.
Add the butter and mix on medium speed until lumps of butter are no longer visible My machine is a Kenwood and I mix on speed 1.
Lightly whisk the milk and egg together, then add this and the sultanas to the mixer bowl and mix on slow speed until all is incorporated. (It’s important to use a SLOW speed otherwise you will bruise the fruit and this will discolour the dough.
The resulting dough should be SOFT but NOT Sticky.
Roll out the dough on a lightly floured surface to a thickness of 2cm (just shy of 1”) and using a 6cm cutter either plain or fluted cut out you 12 scones. Place them on a baking sheet (either non-stick or on baking parchment. Egg wash tops making sure non runs down sides as this will prevent even rising.
Bake in a hot oven at 220c for 11 - 12 minutes

Miss this lovely man, not only for his recipes but I always found him such a calming influence, and loved listening to his voice. Oh yes you are so right. No more of him raiding the fridge on a Thursday to see what he had in and then making up a delight. I loved those videos and his weekly meals were inspiring for us house wives who ask their family what they would like for tea and they reply whatevers going, but best of all his kindness and wit. He is such a sad loss. He was a friend to us all. I hope he knew what an inspiration he was. I will stay subscribed forever!

At 6:19 he says that Mary Berry says to avoid letting egg wash run down the sides of the scone, that this prevents the scone from rising. I’ve seen her videos of making scones. Hers don’t rise as tall as they should; they lean over. That’s because she twists the cutter when cutting out the scones. In the Southern states when we make American Biscuits, (cousins to the English Scones) we are taught to never twist the cutter or else your biscuit will not rise tall, it will lean over like the tower of Pisa 😂. Try it for yourself next time you make scones or American biscuits. 😉

For various reasons I hadn't watched Mr Paul in quite a while, so was really shocked and saddened when I read this morning that he had passed. I will miss him very much. He was a real teacher and a gentleman.

Thanks for the custard tart recipe, I've used it twice and they are perfect. For my taste I reduced the sugar in the pastry.

Alternative recipe, use brown sugar instead, 1. 1/2 teaspoons b. Soda, and sour cream or buttermilk. , alternative addition. Dried blueberries soaked in Pernod, dried cherries soaked in kirsh, roasted pecans, white and milk chocolate coverture.😜😜👍

Same goes for the shot glass they come in various sizes as well unless specify same goes for the the red cup people use that parties but there is a trick you can use for measuring them to.
