I use something even thicker for my tomato base, it’s like tripple concentrated tomato paste, it comes in a tube like toothpaste. Squeeze some into a mug and add some water, herbs, salt and pepper and (garlic and oil if you like), give it a quick mix with a fork, done ☺️ Will definitely try this pizza base, looks so yummy 😍

I struggle with homemade pizza. Your recipe seems very simple. I love a crispy base but I like deep pan similar to Pizza Hut where I cram on lots of toppings.
Great tutorial. I really am encouraged to try this. Will any brand of plain flour work? I have a large terracotta glazed dish maybe for making quiche etc. just wondering if it would work for the pizza?
Hi Mary, Thanks for commenting. Your terracotta dish is NOT suitable for cooking a Pizza. It needs to go onto a very HOT pre-heated oven shelf, this will prevent the bottom becoming soggy. YES aby plain flour or bread flour will work.
Dough is completely raw in the middle. If your oven only goes to 250c, it's ESSCENTIAL that you pre-bake the dough with just the tomato sauce on it, for about 5 minutes, then add the toppings and whack it back in.
Hi Mr Paul , have always cheated and bought plain bases or cheap ones with not much topping and added more fillings , but I will make my own base now I am sure it will taste better, I don’t like olive oil or garlic so will use rape seed oil and leave out the dreaded garlic will make several and freeze them if I add bacon should it be fried off before adding or will it cook enough in the oven on the pizza Thank you .

👍 I have to disagree about pizza being simple…it should be.. but it seems a holy grail, maybe it’s me, I’ve tried biga and poolish ..and yes I’m thinking waste of time, then there’s the ovens,,got a wood pellet one, but that’s a pain, so I’m back recently to dough like yours. ..errr and an electric pizza oven🤷🙄😂. Funnily enough today Vincenzo s plate (u tube) put pizza recipe up…and I thought his method of stretching over upturned stainless bowl was good. ..obvs..he shows the slap/stretch . I agree totally with you ref plain flour…👍bread flour is unmanageable imo, and….pizza ends up like…..bread 😂 I get the trusty bernzomatic blow torch out to blacken the edges 👌 Thanks for upload. 👍👍 can’t have enough pizza vids !
I was surprised to see so much watery liquid for the sauce. I thought the pizza would come out soggy. It looked fine. In your experience, reducing the liquid in the sauce would result in a crispier center crust?

The less topping you have the crispier the base.

NO just very dry topping. If your base was not crispy, you either did not place it on a pre heated oven shelf or you oven was not hot enough.
