In response to the commenters asking why dehydrating isn’t cooking- I’d have to say that dehydrating happens at a MUCH lower temperature than cooking. Cooking happens at at least 185F to simmer, but for most cooking happens at 212F to 500F or above. Dehydrating can occur at room temperature or in higher outdoor temperatures like Palm Springs at 120F- much lower of a temperature and less nutrients lost I’d say.
Any time you use a device that affects food molecular structure it is no longer raw. For example raw tomatoes is not the same as dehydrated tomatoes. But I think this point is minor in the grand scheme of things.
