This was the flavor I was looking for. I gave up on my 5th try over 50 years ago failing to get that very special "Italian" identifiable meatball flavor. I switched to "meating" my red sauce gravy with pork neck bones and pork store-bought Italian hot and sweet sausages. A lot less fuss. A reasonable consolation. Now I'm about to begin the second launch of your fabulously traditional meatball recipe. Only this time it will be second nature. Thanks for sharing.

Nice. I usually throw the meat from an Italian sausage in the mix too. Try putting the meatballs and bits in the pan into the sauce rather the sauce into the fry pan. That way you avoid the explosive reaction and the meatballs flavor the sauce too.
As a Swede, I make Swedish meatballs. It is a lot simpler and goes way faster. For cheating, one can make "pannbiff", which is kind of a burger. I have no doubt your meatballs taste great, but I am a lot faster (not professional) and it still taste great. :)
A guy named *ALEX* on YT makes a good meatball. A good sauce is going to help as well. (search YT) As for pasta...*De Cecco* brand is considered, by many, to be the best *Italian import, reasonably priced, readily available in any decent, big chain, American grocery store. Of course there are gourmet/boutique brands from Italy available online too, but pricy. ALEX has good videos about pasta as well. Very interesting. I watch A LOT of cooking vids on YT. It's a great resource for home cooks.
Melin Francisco yes it will! Also hard to wash ground meat. The more liquid that is added (even when you dry it off it remains wet) the harder it is for the meat to bind together into a meatball.

No……Your beard looks great and you look handsome…..👵🏻. And I don’t like putting breadcrumbs in my meatballs I soak bread in milk and squeeze some of the milk out and add that to the meat…. I feel the breadcrumbs make them dry…
Never heard of Ricotta cheese in meatballs....Usually Romano Pecorino. But hey, whatever floats your boat I suppose. We have a couple, maybe more, of generations that believe it's ok to put pineapple on pizza.
I use both Ricotta & Pecorino. Everyone has a recipe. I like fresh parsley & a dash of nutmeg in the Ricotta. To each his own....But for garnish it's always fresh basil and a sprinkle of Pecorino for me. And MY Sicilian nonna always put Fennel Seed in her meatballs. I grew up with it and love it....but may not be to everyone's taste. There's no cooking police in my kitchen....you like pineapple & ham on pizza, you get to have what you like.
i typed in my search bar on youtube : best meatballs without egg" and this is the video i get, meatballs with egg, clearly people along the generations forgot egg doesn't belong in meatballs, past on from parent to child. egg got only introduced for the easy binding, but no1 ever tell you, the eggs takes away most of the other flavors/ingredients.. you don't need egg ever in meatballs, only if 1 is lazy or teached that way and doesn't know better.. so sad how society changing with all the lost knowledge from our great grandparents .

Looks good but you shouldn’t put that much tomato sauce in a cast iron skillet. Acid + cast iron = no good.

Lizz instead of the Ricotta? I wouldn’t because it has the right moisture level to keep these very juicy. If you absolutely have to you can use mozz.

Lizz it really does “melt” into it. Try a small batch to see. If not, use a fresh mozz. That has good moisture too.
