Homemade Burgers and Crispy Fries

  • Here is my simple way to make juicy home cooked burgers and hand cut crispy tender french fries. I also include an optional burger sauce that is pretty much my attempt at a special sauce recipe.
    INGREDIENTS for BURGERS
    1 lb 85/15 ground beef
    1/2 tsp salt
    1/4 tsp black pepper
    Hamburger buns of your choice
    butter for toasting buns
    INGREDIENTS for Fries
    2 medium to large potatoes (each potato is one serving of fries)
    oil for frying
    ice cold water
    salt to taste
    INGREDIENTS for Sauce
    1/2 cup mayo
    2 tbls spicy brown mustard
    1 tbls ketchup
    2 tbls chopped dill pickle
    1/4 tsp onion powder
    1/4 garlic powder
    1/2 tsp paprika

    Everything looks good. I can't wait to try that sauce on my burger. I love how you put the onion slice into the burger and then grill it. I am more of a cooked onion person than a raw onion person.

      I might be wrong but I recall Oklahoma-style burgers having super thin, almost shaved onion pressed into the burger patty then cooked.

    I just love that you peeled your potatoes with a knife. I grew up doing that and still do it even if I have 3 vegetable peelers in my kitchen drawer. You're awesome and I just love your recipes. I can't wait for your cookbook to come out! 💜

    I've seen you use a knife in other videos to peel your potatoes. Just wondering why not use potatoes peeler, I know my mother never used a potatoes peeler always a knife. I did notice your potatoes peel a lot cleaner using a knife though. End results were perfect. Thanks for sharing.

      My mom and dad both cooked, neither of whom ever used a peeler, just a big long knife I could never comfortably handle myself. Too awkward, but we all develop skill with whatever cutting implement is handy and use often.

    I j wanted to say that it’s more correct that after the potato lay in the water it needs to be put in the refrigerator for an hour, so that it becomes more crispy, and thanks so much for the video. BTW hello from Russia love ur videos very much.🤍🤍🤍

    I love the way you cook those french fries I want to have to try that when I cook my burgers I usually put in finely chopped onions green pepper and mushrooms into the meat with my seasonings and then I grill it. And I noticed only two burgers got onions the other two must have been for the boys haha. Mine don't like onions either or any other vegetable for that matter

    I like that idea with the onions. I got a griddle but i just use it for grilled cheese sandwich and pancakes. When you use your griddle does the grease splatter on everything?? I use knife on taters too. So much faster and you really don't waste that much tater either compared to time.

      It does pop and splash a little, but nothing too messy. Yes I agree that using a knife is a convenient, but a peeler would probably give you a little more potato. Lol... :)

    Something that I do when frying like that, I use a taller pot, like a stew pot, to minimize the oil spatter. I know in your case, you have to show the food on video but just sharing an idea.

    Props to you, Mamá, for that sauce, even if, as you say, it's not your first choice for dressing burgers. I think that your sauce is basically a version of McDonald's special sauce, right? Just my personal opinion, but I think that's the single best condiment a burger can sport.

    Used to work at Mickey Dee's (McDonalds) and the hardest thing to replicate is their bread, but I just found out Trader Joe's has excellent hamburger buns that are very similar to the golden arches, but larger.

    I'm happy to see you use the two step French frying technique for super crispiness. A jerk guy ridiculed another YT cook for cooking her chicken pieces that way, so I stepped in and l gave him what for. The nerve of a culinary DOLT critiquing laughingly, only to wind up looking really STUPID.

    How come you don't use a potato peeler? Also when you put the dirty bag on the cutting board you can contaminate your food. You should show you rinsed the dirt off the potatoes.

      I seive out any food particles and try to reuse what I can. When I dispose of it I let it cool then pour in a used container in the trash.

      One trick I like is to use a 4 or 8 cup coffee filter(depending on the amount of oil) in a strainer. I mostly this for fried fish but it can work for anything. Just a thought.

      Im using a knife tonight for fries in 40yrs Ive always done. And Im from the city. Its all about how you grew up. And whats easier for you. And when your cooking for your children. You dont care how you open a can. 👀😂😂Or how you peel potatoes. Long as they eat.
