    Thanks for posting this!! It’s the only video or even piece of content that I could find resembling what I was looking for... which was pearl sugar to put on the top of Swedish buns. I did have to use slightly more water, but this worked amazing. And for those wondering, I sprinkled the pearl sugar on after egg washing and before baking. I was worried they would melt but they didn’t. If anyone is curious, I will post a photo of them on my RUclips channel so you can confirm for yourself it will work for Swedish buns

    Great tip, and for those having trouble finding cornstarch-free icing sugar, I blend the bejeezus out of granulated sugar...and Bob's your uncle

    Thank you so much for sharing, I managed to make half a batch of your recipe. Its is simple and work's. Only difference is that I placed the icing sugar & water in a zip lock bag n knead till well incorporated. Waited for it to dry off a bit n grated it. Now I have a bottle of pearl sugar. U are awesome to share this recipe.

    For people planning on trying this; you can only use this as a topping. Real pearl sugar is made under a very high pressure which forms the pearls. This results in sugarpearls that stay intact when getting baked in a batter. This sugar however will melt when baked into a batter.

      Maybe add egg whites and not water that would make them very hard

      This sugar will melt when used in a batter. Real pearlsugar is formed under pressure which results in pearls that do not melt when heated. BUT; I tried using this method for liege waffles before and it's still delicious!

      @@maaikebelmans3200 I stumbled on this one after viewing 2 others. I would prefer smaller pieces I think. I will try the bigger one (similar to what you mentioned but no pressure) then this one later. Good cookin~

    Excelente video, llevo un tiempo buscando la forma de hacer azucar perlado, ya que no tengo acceso al azucar. Solo lo hay en internet y a precios escandalosos.
    Una pregunta: tiene las mismas características de aguante al calor que el original belga?
    Se podría presar mas grande para que salgan trozos mas grandes? Estoy pensando en algún tipo de presa que ayude a este fin.

      Hola, Muhammad Kallouj gracias por el comentario, ( lo que compramos, se cuece al vapor, y probablemente con algún aditivo ) esto se hace solo con agua y azúcar, y a temperatura ambiente, si tiene que usarlo para productos horneados, póngalo al final de la cocción. Para mi lo uso en pasteles ya cocidos, cepillados con miel o mermelada o glaseados. Para el tamaño, esto depende de los orificios en los que pasas el azúcar, claro que cuanto más grandes sean los agujeros, más fuerza se necesita para sacar el azúcar. Bienvenido a mi canal, saludos.

    That is really great but how good is it in Liege waffles? I made my own pearl sugar by cooking sugar with a little water, etc. It looked and felt good but made an awful mess in my waffle iron and I still have no idea about the crispy/caramelized whatever in a real Liege waffle. I got burned sugar running out of holes in the dough.
    There is a video apparently from Russia claiming to show the manufacture of pearl sugar and it appears the sugar blocks are heavily pressed by machine, then ground and sifted. What little I can find on the subject says pearl sugar is made by compressing sugar. But for some reason, pounding up sugar cubes does not work the same. (I tried that too and got a nasty mess in the waffle iron.)
    I can see how the method here would work for many applications but powdered sugar contains corn starch so, as mentioned the base product is a fondant. I could try it in Liege waffles but my recipe for that requires a 24 hour process and it's a lot of work if the end result is a nasty mess.
    Where I live, I will never have the chance to try real Liege waffles so I have to experiment till I make my own.
    There are some videos and other information online to make sugar blocks to feed honey bees over the winter. If a few bee friendly ingredients were left out, it looks like that process might make a block of sugar one could grind nicely.
    Thank you for the video here. I will try it because I think there are many good uses for what is made with this process.

      Hello Anna, welcome to my channel!! Like I already said in other comments I use it as a garnish for already baked sweets with a little honey or jam. As you already said, the process of sugar for liege waffle is made in factories, most likely with additives that we don't know about. Having read the ingredients of some store-bough pearl sugar, it says that it may contain flour, I made some experiments and I added some flour to the boiled sugar at 221 Fahrenheit degrees, the sugar becomes white, porous and very hard. At the moment I'm still doing experiments, if baking it doesn't burn it I'll make a video and I'll publish it.

      Keep it in a closed container at room temperature and it won't melt
