Just made them! Used almond milk instead of cow + 1 tablespoon of yogurt. And they taste great!!! My Belgian boyfriend said: approved! 🎉perfect balance of softness and crunchiness.

Crunchy crust, chewy crumb and loads of flavour... just like the host said, you won’t need any toppings to enjoy these beauties (although they are great with some whipped cream, too!). They seriously reminded us of the delicious waffles we’ve had when visiting Ghent. Well done and thank you for sharing this recipe! I made this 3 times: once when I was in Romania back home and 2 times living in another country. I can tell you that th recipe is very accurate and good and that the pearl sugar is everything. I also use to think it's not when I used normal sugar in Romania, but the pearl one really adds a crunch. Also, I saw that the flour is also suuuper important. In Romania and where I live now I always got the normal cheapest flour. I realised that the one back home was 2 times more absorbant than the one where I am right now. So in order to get that dense texture and feeling, where I live now I had to add almost double the quantity of flour, otherwise it would have been fluffy, not dense.
This recipe is genious! Made myself a sugar free version by replacing the sugar with erithrit powder. It tastes so much like the waffels I had in Belgium and now I can eat even more of them!
easy recipe and good results. If you're on the low-sugar side of life, I suggest reducing the pearl sugar at least to 100gr. I still put 100gr and it was too much, so next time I'll be doing 70.

Yo! Been a while. I went back to this video and recipe today. Found Swedish Pearl sugar in the grocery store, it's smaller, the size of pretzel salt, but it worked ins pinch. Also, instant yeast worked just fine 👍🏻

The pearl sugar adds quite a bit to this. It would work without them, but I’d recommended getting it. Amazon has it, if you’re not in Europe. These taste the same as the deliciousness over here in Belgium!
These turned out fantastic! I made a double batch and froze half. They were perfect reheated in the toaster. What he doesn’t mention is what the Pearl sugar does to your waffle iron. I found a wooden skewer was the ticket for getting caramelized sugar out of all those little squares.
Its an old comment but I've seen people use the frozen dough strait out of the freezer here in Belgium(they were frozen in waffle size). I don't know how they froze them and the recipe is probebly a bit different but you couldn't tell taste wise. I feel a reheated waffle is not the same as a fresch one. Might be worth a try.
Never really liked waffle over pancakes but after eating these I can say for a brief moment they came close to making think perhaps I was wrong. My family and I thank you for uploading this video with the recipe so very simple the hardest part was locating the peal sugar and not burning myself from the melded sugar
I wish I'd seen this video years ago! I lived in Liège and Charleroi for 8 months in my twenties and was shown by a local how to make these. I wrote the recipe down using grams and when I got home to Canada, I struggled to get the recipe right lol. And the recipe was different (and more complex) than your version, so thank you!!! I just need to get my hands on some sucre perlé....

To make pearlsugar: 1. Put sugar into a pan 2. Just barely put water in, til it turns to wet slush 3. Heat it up Note: it should get quite thin 4. pull it of the heat when it gets slushy again as water evaporates. Note: If you just end up with a sirup, then add more sugar to saturate and begin crystalization 5. Let it cool and dry 6. Beat the chunks of sugar into the perfect sized chunks Voila

Nice, I bet you could also get stellar results using coconut palm sugar instead of pearl sugar, that comes in super dense hard blocks and cutting it into small chunks. Most Asian stores sell it and it has a much richer flavor than regular white sugar. I'm convinced I can make a better Liege waffle than the Belgians, through experimentation using better ingredients. My experience with bread making has taught me a slower, longer, ferment using less yeast yields much better flavor, so I'm pretty sure a 12-24 hr ferment, and no kneading, will produce a superior waffle. Experimenting with different types of yeast, maybe even brewing yeast could potentially add even better flavor than standard store bread yeast. Lots of fun ideas to play with here...
I think you could get around experimenting with a lot of this recipe. Or if you have some sourdough starter you could throw it in too! Pearl sugar is so gooood tho!

Pearl sugar is used a lot in Swedish cooking as well, though the Swedish "pearls" are much smaller!

These turned out fantastic! I made a double batch and froze half. They were perfect reheated in the toaster. What he doesn’t mention is what the Pearl sugar does to your waffle iron. I found a wooden skewer was the ticket for getting caramelized sugar out of all those little squares.
Its an old comment but I've seen people use the frozen dough strait out of the freezer here in Belgium(they were frozen in waffle size). I don't know how they froze them and the recipe is probebly a bit different but you couldn't tell taste wise. I feel a reheated waffle is not the same as a fresch one. Might be worth a try.

Never really liked waffle over pancakes but after eating these I can say for a brief moment they came close to making think perhaps I was wrong. My family and I thank you for uploading this video with the recipe so very simple the hardest part was locating the peal sugar and not burning myself from the melded sugar

I wish I'd seen this video years ago! I lived in Liège and Charleroi for 8 months in my twenties and was shown by a local how to make these. I wrote the recipe down using grams and when I got home to Canada, I struggled to get the recipe right lol. And the recipe was different (and more complex) than your version, so thank you!!! I just need to get my hands on some sucre perlé....

To make pearlsugar:
1. Put sugar into a pan
2. Just barely put water in, til it turns to wet slush
3. Heat it up
Note: it should get quite thin
4. pull it of the heat when it gets slushy again as water evaporates.
Note: If you just end up with a sirup, then add more sugar to saturate and begin crystalization
5. Let it cool and dry
6. Beat the chunks of sugar into the perfect sized chunks

I skipped the pearl sugar part because I didnt have it but later found out I should have just substituted it with normal sugar but other than that it came out amazing😁thanks for the recipe
What if you don’t want to be biting into clumps of sugar?
Then don't have to put them in, you can instead place a little brown sugar on top of each ball of waffle mixture to give it a nice caramelised effect
Nice, I bet you could also get stellar results using coconut palm sugar instead of pearl sugar, that comes in super dense hard blocks and cutting it into small chunks. Most Asian stores sell it and it has a much richer flavor than regular white sugar. I'm convinced I can make a better Liege waffle than the Belgians, through experimentation using better ingredients. My experience with bread making has taught me a slower, longer, ferment using less yeast yields much better flavor, so I'm pretty sure a 12-24 hr ferment, and no kneading, will produce a superior waffle. Experimenting with different types of yeast, maybe even brewing yeast could potentially add even better flavor than standard store bread yeast. Lots of fun ideas to play with here...
I think you could get around experimenting with a lot of this recipe. Or if you have some sourdough starter you could throw it in too! Pearl sugar is so gooood tho!
