  • Chef Anna Olson makes shows you how to make amazing buttermilk waffles from scratch! These big, homemade waffles can be made with chocolate chips if you choose, and topped with maple syrup and fresh berries for garnish.

    Ingredients
    1 ½ cups (225 g) all-purpose flour
    2 Tbsp (25 g) granulated sugar
    1 Tbsp (9 g) baking powder
    ½ tsp (2.5 g) fine salt
    1 ¼ cups (310 mL) buttermilk
    ½ cup (125 mL) vegetable oil
    2 large eggs, separated
    1 cup (175 g) chocolate chips (optional)
    Maple syrup and fresh berries, for serving
    Directions
    1. For the waffles, stir the flour, sugar, baking powder and salt together. In a separate bowl, whisk the buttermilk, oil and egg yolks together. Add this to the dry mixture and stir gently until blended (but, like pancake batter, a few lumps are OK).
    2. In another bowl, whisk the 2 egg whites (by hand or with electric beaters) until they hold a soft peak when the whisk or beaters are lifted. Fold these gently into the batter. Stir in the chocolate chips, if using.
    3. Preheat your waffle iron according to instructions. Lightly grease the iron (if requested in the instructions) and ladle batter to fill the iron once closed (the first waffle is your test as to how much batter to use). Cook the waffle until lightly browned at crisp, and remove. Repeat with the remaining batter. You can make the waffles ahead of time and re-warm (oven, grill or toaster - not the microwave), since they are best served warm. Served drizzled with maple syrup and topped with fresh berries.

    Thank you - made these this morning and worked beautifully - 4 minutes on our little electric double-iron. Used 2 bowls, one whisk - just after the whites were fluffy mixed the ingredients and folded the whites in and they kept their fluffiness all the way to the end of the batch.

    Omg! Great recipe!
    I added about 3 tsps of ground flax seeds and same amount of hemp seeds. I didn't have buttermilk so I used 1 cup of coconut milk and about 3 tsps of greek yogurt. I used about 1/3c melted butter instead of the 1/2c of oil and wow. My boyfriend thought they were the best Waffles ever! He ate two full waffles with two eggs and a sausage! They tasted amazing!
    I have the Waring Pro Double Waffle Maker. Makes thick waffles with deep pockets. Excellent waffle maker! Easy to use. I've had it for years. It was one of the best Christmas presents I've ever received. 😊💕

      No need for adding so much oil and sugar. Just add a really ripe banana, made with oatmeal it's such healthier.

    I trust her recipes, and was not mislead this time either! Beautiful, fluffy, light waffles they turned out to be.
    I topped them with home-made chocolate sauce and lightly whipped cream. Yum indeed.

    Just made waffles today using this recipe. They were delicious....crispy and flavorful. I doubled all ingredients (except sugar) and had enough for 8-9 total waffles that were about 6" diameter. This will be my go to recipe from now on

    This is my very belated )) thank you response. I found this recipe back in March at the beginning of lockdown while searching for some new ideas to cook at home. Ones upon a time I've tried to make waffles, and bought the waffle iron. I did not find any recipe I liked back then, and the iron has been collecting the dust inside my kitchen cabinet for about good ten years, or so ))). Because of your recipe the iron stays on the countertop permanently now. It's truly the best recipe! So easy and fast, and absolutely the best. I store the rest of freshly baked waffles into freezer, then defrost them in toaster, and they are still amazing. Thank you so much Anna!

    These waffles were really fluffy and crispy! I substitute the buttermilk with non-dairy buttermilk and works well too!

    Making them right now! They look yummy. My family keeps coming to the kitchen to ask when they’ll be ready lol. I used European butter instead of oil because I didn’t have any in stock. The butter clumped up once in the buttermilk mixture.
    I then read online to mix the eggs & buttermilk first and it won’t clump.

    Thank you for this amazing recipe.
    I made these in the morning and it came out just perfect, crispy outside while fluffy inside.
    I baked them in a waffle silicone mold, low rack ,180 °C preheated oven,I flipped them after 12 min. in the same mold for another 10 min. to the desired point of crispness and colour.

    Dear Anna, today we had your waffles for breakfast! They are sooo yummy!!! I had mine with blueberries, syrup and confectioners sugar. My grandson decided on blueberries, syrup and all kinds of sprinkles! He (3 yrs) also insisted watching your video again, while eating his waffles! So cute!! He said that is Anna, ... all in love!

    This was so good, the only tweak I made was adding more buttermilk (I didn’t have any so I mixed 2 cups of milk with 2 TBSP of lemon)
    I added as much as she did but the batter would pour through the spout (I have a vertical waffle maker) so I kept adding more buttermilk till it got nice and flowy!
    This waffle recipe was so so good and I’d recommend it to everyone!

    whipping the egg whites is a method of making many prepared batters light and smooth textured. Great pancakes.

    Now THIS is the waffle recipe I've been looking for. The separating the egg technique is the magic trick. And I was using too much flour in my batter. I can't wait to make another batch.

    I make this recipe all the time, they turn out perfect Everytime. If you are worried about left over batter is suggest just making the entire batch, storing the left over waffles in the fridge or freezer and toast them in a toaster oven for quick breakfast . They crisp up nicely and taste even better reheated.
