How To Make Zarda Chawal | Meethe Chawal Recipe| Pakistani Sweet Rice For Beginners

In this video I show you to make a Pakistani sweet rice dish called Zarda or also known as Meethe Chawal. It's particularly eaten during Eid and other special occasions. Many people struggle to make this rice so I've given a detailed recipe for the zarda in the video and below with some tips.
Ingredients:
515g Sella Rice
3 Litres Water
½ Tsp Orange Food Colour (Powder)
Pinch Red Food Colour (Powder)
160g Salted Butter
3 Green Cardamoms (Elaichi)
400g Sugar
¼ Cup Milk
1 Tbsp Fresh Lemon Juice
80g Blanched Almonds
12 Coconut Slices
70g Green Raisins
Handful Pistachio
Tips:
1. The time needed to boil the rice will depend on the brand and amount of time it was left to soak. You can check the rice around 7-8 mins into boiling and then check after every minute to ensure you don’t overcook the rice.
2. To check the rice you need to squash it between your thumb and finger. It should take a bit of pressure to squash however you shouldn’t see any hard or white grain running through it.
3. You know the syrup has thickened enough when you cut through the bottom and you can see the bottom of the pan for at least a few seconds.
4. It’s important to scrape down the edges of the pan once the sugar hardens otherwise it will take too long to melt.
5. Covering the rice with the lid will make sure the syrup melts really well, however if you feel like the rice is over cooking turn up the heat and evaporate the syrup, don’t cover for the time given in the recipe.
