Also, back then there was no freezers. The pile of potatoes where freshly cut in a potatoe slicer! Miss those fresh days!

I also worked there. The burger patties can only be on the grill for a set time. When they teach that limit and there are no orders they put them in a plastic bin by the grill. When it's full they cover it and put it in the walk-in. There is absolutely nothing wrong with it and obviously, the chili tastes nice.

We used broken patties and patties that had been on the grill too long to serve in a sandwich. Perfectly fine meat, just not acceptable as a 'fresh' sandwich anymore. These were then boiled to remove excess fat and chopped into chili meat for batches. The better trained your crew, the less broken/older patties you get. And yes, we always had to add fresh cooked patties to make the 10 pound batches because we trained well. Haven't managed Wendy's in 30+ years but still like their chili occasionally.

Past Panera Bread Baker here! The claims on here about Panera’s pastries being “warmed” rather than baked fresh daily are false! Most of pastries are prepared, flash frozen before being baked and boxed at a central commissary then shipped to each Panera Store, based on that store’s needs. The cases are stored in a walk-in freezer where each night , near the end of their shift, the bakers pull the number of each to be baked the following night for the day after that. They tray them up, place them on racks, cover the racks with a large plastic bag then roll the racks into a walk-in cooker to thaw for the next night’s bake. Cookie dough is portioned, frozen, boxed then shipped to the stores the same way as the pastries. Muffin batter is prepared, packed in buckets which are frozen and shipped to the stores. Once a bucket of batter has been opened, the rest is sealed and stored in a walk-in cooler. Bread dough is prepared, portioned, frozen, boxed and shipped to stores the same way. This is how Panera Bread can assure that all baked product is consistent from one store to another.
Every night, bakers pull racks of pastries, cookies, muffins and bread dough from the walk-in coolers. Each pastry has specific ‘preparations’, done by the bakers (think-scoring bear claws and fanning them out) before they are baked, cooled and finished (think-drizzling icing over cinnamon rolls). Panera bakers in Western PA work 10 hour shifts overnight so all baked product is fresh for the following day! Pastry items are so popular that they often sell out by lunchtime. Day-shift managers will often have to pull additional product from the freezer, thaw them, bake them and finish them if a product sells out. All left over product is bagged when the stores close and donated to local charity. I can tell you with certainty that all of the bakers that I knew took pride in their work, scrutinizing every step along the way. Additionally, bakers never knew when a quality control check would be performed on them by regional master baker managers.

I was also a night baker at Panera and did take a lot of pride in every one of my bakes (although many managers did not ) . Everything you said is true, but I am worried that recently things may have changed. I'd like to hear directly from more recent employees. I'm sad to see many of the old pastries have gone. What happened to the pecan rolls? And what's with those gross cinnamon rolls?

@@nuaru100 Hi! It’s so nice to hear from another “prideful baker”! Yes, our hard work definitely went unnoticed many, many times! Seemed the more we did to ‘prove’ our worth, the more work & responsibilities fell on our tired shoulders-nightly, right? Sadly I departed Panera & left behind all of my ‘talents’ in 2006.
Early in my shift one night, as I bent over in the walk-in cooler to retrieve a box of fresh fruit I’d be using for pastries, I felt (& heard!) a sudden painful ‘pop’ in my low back! Within minutes, both of my legs started to go numb! I tried to ignore the pain & just walk (or work!) it off, to no avail. Realizing I was in trouble & not going to be able to complete my duties for the remaining hours of my 10 hour shift (alone-mind you!), I called our baking manager (who supervised the bakers in over 10 different Paneras). Seemed I caught him between a rock & a hard place! I’ll never forget him asking if I “can’t just stick it out”! No! I am loosing all feeling in my legs & I’m afraid I’m going to fall! I need to go to the ER! Well, at least an hour passed before he showed up to relieve me. I drove myself to the hospital that night & how I did that, I can’t tell you! It took about 12 weeks for a neurosurgeon to be approved to treat me & to finally diagnose: a ruptured disk between my 4th & 5th lumbar vertebrae. Even during the course of my medical treatment, Panera controlled which doctors I saw & what treatments I received. (If only the ER doctor would’ve ordered a CT scan or an MRI that night, the diagnosis wouldn’t have taken 12 wks of nonproductive physical therapy! ……but, I digress!
Fast forward 17 years later, after 2 failed back surgeries & the horrors of 15 years of Fentanyl for pain relief, I am disabled & my entire life away of Panera has been completely turned upside down! On December 2 I am going to have a Spinal Cord Stimulator surgically implanted to prevent my brain from feeling the pain in my back & both of my legs. It’s not a cure-there never ‘will be’ a cure-but it’s an acceptable form of permanent (hopefully) pain relief. Next month I’ll turn 69; perhaps with the SCS surgery I can ‘live’ another 10, 15, 20 years? Maybe I can makeup for ‘some’ of the 17 years I’ve mustered through? We’ll see!
The point of me sharing my story-Panera bakers are expendable, no matter how dedicated, professional or talented they are.

Besides the lack of respect, there was the night the closing manager forgot to lock the back door (not the first time) and the cops making rounds tried the door and set off the alarms. I had no idea they did this. But suddenly all of the alarms went off, and I was left hiding in a dark corner holding the biggest knife I could find. By the time the police officers rounded the corner of the baking area I was a mass of raw nerves. Before that night, solo bakes were kind of fun, I played my music as loud as I wanted, and shouted out anything I cared to shout. Things were never the same after that night.

I think so too, especially in the case of Wendy’s chili. I would expect it to be fresh. I work for a fast food place, and there’s a certain time that the item “expires”, and if it’s not saved (given to an employee, put in something else, etc.), it just goes to the trash, but to fix the problem, they want the restaurant to buy a fresh thing of ground beef, or to buy the cut of meat that ground beef is made out of and grind it..., which creates more overhead for the restaurant...

Also, in regards to Wendy's, it's better to use the unused patties for the chili than to have it go to waste. The last thing we should be doing is wasting food. People in not so developed countries would wish to have the food that those in wealthy countries waste.

6:01 in the early 2000s I was an assistant manager at Wendy's... I can attest that the Wendy's chilli is made with leftover patties. They are weighed out and portioned into bags. Then frozen. They are good for 7 days. When preparing to use the chilli meat, you place the bags inside a rethermalizer to thaw, then chop the meat with a spatula until you get pieces no smaller than a dime but no larger than a nickel. Add beans water and chilli powder and let simmer for no less than 4 hrs... But if it is a re-heat from the night before it only gets 2 hours

The roast beef is packaged, yes; it’s a ten pound formed roast that is a mixture of sirloin, tenderloin, top round, and chuck that has some binder put in (beef navals, scrap pieces of all cuts of meat). When the roast is cut out of the bag, it is red in colour, not brown. It gets roasted in an oven for four hours.
There is salt and water added to the mix. The roast comes to the restaurant frozen, and then is thawed in the fridge for 2-3 days. A formula is used to determine how much beef is required- there’s a lot of planning ahead.

Patrick, I have an Arby's story that just happened to me a couple weeks ago. I was on my way home and at 9:44 pm on 2/8/23 (I'm looking at the receipt as I write this) I decide to hit the Arby's drive-thru to pick up a sandwich for myself and my grandson who lives with me. The sandwich that I chose for myself was the French Dip & Swiss. I used to like that sandwich with the Au Ju gravy to dip it in. I noticed that in the last couple years they put less & less Au Ju in the cup for the sandwich to the point that it was only half full. Well, when I got home I discovered that they gave me the cup of gravy, but no sandwich. Maan, I was hungry, too. I had also ordered 2 for $4.99 Arby Melts for us for later, so at least I had something to eat. I called the Arby's on the phone to let them know that they didn't give me my sandwich and if they could make note somehow that they owed me a sandwich- $6.19. It was 10:00 pm now and the Arby's is 2 miles away. I would have driven back but they told me they closed at 10 but if I gave them my name they would give me my sandwich when I came back. So I proceeded to eat my measly Arby Melt and figured I could at least enhance it with my surprisingly nearly full cup of Au Ju. I dip my sandwich in it and... UGH, WTHeck?! What IS this, salt water?! What are they giving as Au Ju now? A bullion cube in hot water? Ok, as bad as that was it only gets worse. Nearly a week later I was in the area of the Arby's so I decided to pick us up a couple sandwiches again- they owed me one. I told them that they should have my name there for me to get my sandwich. I was refused.

I used to love Arby’s Beef n Cheddar til I came across gristle in my meat. MAJOR turn off. Love their turkey sandwiches, tho. But then again, what can you do to ruin a turkey club or turkey ranch & bacon, turkey & swiss or even Arby’s turkey gyro.

It's true that hardly any ice machines are cleaned regularly. Probably because their working parts are not "exposed" to kitchen workers, so they never see the crud building up inside. I used to work in a laboratory with an ice machine. The people there would take scoops of ice occasionally for their drinks at lunch....I tried to tell them that they should consider it "non-potable". It wasn't until one day I opened the front covers and showed them the water trickling down over parts covered in mold and dirt, that they got the message. I used to shut the machine off for an hour once a month and clean all the surfaces that water would touch. The in-line water filters on most of these machines are never changed either. Yecch!

Blows my mind how many people knock fast food, or even restaurant food, for being frozen and warmed rather than 'fresh'. Its like people expect a full blown butcher shop in the backroom of the restaurant cranking out fresh cuts everyday - or that a franchise isn't going to get prepackaged food rather than hiring double the staff (double the money) in order to have an overnight crew to prepare all the food for the next day (and have ungodly amounts of waste everyday). If you want such fresh, straight from the farm food you need to prepare it yourself because it isn't realistic in the food industry unless you want to pay double or triple what you pay for food at current franchises. Also, not every franchise location has the same low or high standards of hygiene - the McD's in your town may be filthy and not worth the health risk, but the McD's franchise in the next town over might have stricter management pushing higher quality and hygiene. Case in point, go watch some Stephen Patula videos and tell me you wouldn't be happy to eat at that McD's knowing the kitchen is clean and the food was handled well.

I worked and made the chili and salads for Wendy's for nearly 2 years. Yes, they use patties that they had to take off the grill and put in a pan because you are getting patties off the grill, not from the pan like other places. The patties are then frozen. The next day those patties are boiled in water to cook and get excess grease out(remember, Wendy's chili is low fat and thisnis one of the reasons) after that you combine the chili mix with water and you put in freshly diced tomatoes. Cutting up the burgers was fun. 2 metal spatulas and you just start cutting though until only small pieces remain. You need to add onions ans peppers and then add the meat. It then cooks on the stove in a giant pan for 4 hours. For your fyi about left over chili, there usually isn't any and if there is it gets dumped out at the end of the night. Chili and salads are made fresh every day.

I always do all the cooking at home for my wife & kids but sometimes my wife & I like to get away and hit a Buffet. Key is pig out on Seafood to get your money's worth avoiding heavily breaded items then sample everything else spoonful at a time to see what you like and can make at home. Internet is full of recipes if you like something you tasted.

Also sweet tea. From anywhere. I one time got some sweet tea from one of those containers that you pull the handle down and the tea comes out and what I got was a layer of mold from where the tea was not refrigerated and left out for days. I have never gotten another cup of sweet tea ever again from any fast food chain.

I used to work at Subway. The Tuna is somewhere between 40-50% mayo, not 80% LOL! And I never saw any tuna that was past expiration. The employees open a big pack of tuna and mix it with the mayo ourselves during prep. So, depending on the person making it, there may be a little more or a little less mayo, but 80% is a big exaggeration. Not to mention, mayo isn't bad for you. It contains unsaturated fats which are actually healthy. The ONLY problem is that a lot of mayo is made with crappy quality oils like soybean oil instead of something good like extra virgin olive oil or avocado oil which are much better. Otherwise, the unsaturated fats in mayo are not unhealthy in any way. Quite the opposite, in fact. Not all fats are made equal, and the only types of fats that are super bad for you are trans fats, and the FDA banned trans fats in 2018.

@@sotabaka To be fair, a lot of diets can be done right or done poorly. For instance, I do the Ketogenic diet. There is clean Keto and dirty Keto. I'm somewhere in the middle. I try to eat a cleaner Keto more often than not, but sometimes have processed crap that still fits within my macros if I'm feeling too lazy to cook. Same goes with Vegan. But even their "healthy" foods taste like garbage, so... no thanks, haha!

I'm not sure if you're familiar with this, but there's a convenient store chain along the Mid-Atlantic region called Wawa that has the same procedure Subway has about presliced coldcuts. I'm not sure how their tuna's made, but they do freshly bake their rolls. Sorry, but I'm a slice-it-in-front-of-me hoagie/sub lover. I'm a native Philadelphian, and still live nearby/ far enough away to get deli-sliced sandwiches and cheese steaks.

Tuna just hasn't tasted as good since they started packing everything in water, it's getting hard to find good tuna packed in olive oil anymore. Packed in water tastes like a tin can not fish.

It hasn’t been the same since they done away with COD and a few years during the last recession it was then, they changed a lot of their products and, another was their sausage patties and, these to aren’t fit to eat now at McDonald’s neither. All the fast food restaurants cut their COD then, but, most of those places brought their COD back, thank God, because, it’s my favorite!

I worked at Panera bread one summer and it is disgusting! You think your getting seasoning in your food but it's actually fruit flies! All of the soups come frozen and if they don't sell they refreeze them for the next day. And don't get me started on the salads!🤣🤣🤣
