Recipe
Eggplant, Okra & Spinach Stew Down
25 grams Olive Oil
106 grams Onions, medium dice
13 grams Garlic, sliced
6 grams Scotch Bonnet Pepper, sliced
363 grams Eggplant, large dice
215 grams Okras, sliced into large circles
250 grams Tomatoes, large dice
142 grams Spinach, deveined
2 grams Thyme leaves
350 grams Water
8 grams Cilantro, roughly chopped
25 grams Chives, sliced
Salt and Black Pepper to taste
Method
Step 1
Heat oil in saucepan.
Step 2
Add onions, garlic and scotch bonnet and sweat until the onions are translucent.
Step 3
Add eggplant, okras, tomatoes, spinach, thyme, chives and water and simmer for 30 minutes.
Step 4
Add Cilantro and season to taste with salt and pepper.
Step 5
Eat up and enjoy as it's All Bout Food.
This choka is good with roti also. Absolutely love it!
