This is fantastic. I made it with homemade puff pastry last week - my wife took one bite and said " I could eat that for dinner every day" I am making another one right now ! The book is excellent - I made the sticky onion tart with the rest of my pastry, and it was divine !

But yes, chefs and people who work with food have a tendency to get "asbestos hands" where they desensitize their hands to heat. I think there was an italian chef on Jamie's channel a good while ago who also did a sort of pizza, but he fried it in a pan on the stovetop with a lot of oil. That guy warned viewers not to touch the oil, because it was screaming hot, then accidentally stuck his finger in the oil and didn't even care.

ive made this a few times now and omg its sooo nice . the tomatoes go all sweet and the peppers juicy and the pastry puffs up etc we had it with jumbo sausages , went down very well mmmmm i put mine back in the oven for a few mins just to melt the cheese
I rarely comment but I had to on this occasion. Just made this. Easiest thing ever. One pan. Barely any clean up. Super delicious. It was gone in minutes and what a great way to eat more veg!! So so crispy !! So juicy!!

I used to make something similar years ago.. if you spread some tomato sauce / puree on before topping the puff pastry with the veggies and cheese then oven bake.. it's delish
We used to make something very similar to that 40 years ago, but with cheese and a little sauce. To do it perfect though, you add the pastry over the edge of the tray to leave a small air gap which gives a nice crunch. Then when you flip it over everything falls into place.
Although I've just eaten literally 10 minutes ago my mouth is already watering just at looking at this delicious pizza. I think I need that cook book. :D

I made this with Pyllo dough cause that's what they had at my local store! Delicious as well...poured a bit of melted butter over the pastry dough before putting back in the oven!!!👌 Thanks for the recipe!!!

this really looks like a genius recipe. I have to try this. I’ve made tomato tarts with puff pastry and pizza with it but this looks amazing. I have home grown Abracadabra tomatoes and some striped cherry tomatoes and I have home grown basil (severral varieties). I also have oregano in the yard. All I need is the puff.
When you made it was there any liquid in your pan after the first 50 minutes of baking? I ask because I made it too but used different tomatoes like Roma tomatoes because that is what I had on hand. There was a lot of liquid in my pan that I did not drain. I followed the rest of the directions and the puff pastry was beautiful until I turned it over. The liquid from the pan made the pastry soggy which was still good but I don't want soggy puff pastry. I want crunchy. The vegetables were out of this world good! I have another batch in the over tonight. Used the correct tomatoes this time. Just put it in the oven so I don't know yet if there will be a lot of juice. What did you experience and did you use the same kind of tomatoes Jamie used?
@@sadielong3021 I know this is a super late reply, but here iy goes. I use the same tomatoes he does. I do have some liquid after roasting my veggies which I usually try to drain a little. I dont understand how he doesnt seem to have any liquid but I guess it is his chefyness ;)
Awesome recipe! Now time to make a version closer to traditional pizza with tomato sauce and melted cheese. I'm thinking after vegetables are roasted, pour a moderate amount of stove top heated tomato sauce over the vegs, then completely cover with grated whole milk Mozzarella , and lastly cover with the puff pastry. The cheese over the tomato sauce will stop it from soaking into the pastry so it doesn't get soggy.
Thanks for using the zucchini stem. There is a lot of good food that gets wasted. I got 2 bags of free beet greens that people take off and give back to the farmers. I saute the stems with the dice onions that the leafs......yummm
Not on this one! Not on this cheese. You can still and shredded mozzarella and melt it 3 minutes and finish it like he did cause that way add freshness to your dish and bite. Will
Next cookbook should be for people that are sensitive to nightshade foods. I get nerve pain and must avoid nightshades. Love your enthusiasm for food and style.
