      @@tonysexymasseuse3775 Big Mac sauce, secret sauce , burger sauce, whatever u call it, where ever it’s from, its got Mayo in it. Like the man said it’s bout ratio, it’s bout proportion.

      The problem is that ratio and proportion is subjective. People enjoy things differently.... the perfect burger is different for each person....

    "In a perfect World, you should be able to eat a burger with one hand," I feel the sentiment was shared by Jim Delligatti in '67. Bread is the crucial foundation. Dwight Schrute almost quit Dunder Mifflin, saying "Bread is the paper of the food industry. You write your sandwich on it." I agree with all critiques of unnecessarily tall burgers. Architecture is especially tricky when you're supposed to eat the damn thing.

    The perfection hides in a well thought out combination of condiments and toppings, keeping 'will this improve it?' in mind as indeed the golden rule. The options are however so vast and tasty that the classic burger should be approached as a blank canvas instead of a finished painting.

    Wow, he summed up exactly how I feel about how a burger should be (and I've never been able to put it this way). My friends are amused at my Big Mac Ritual where I re-organize the burger before eating it, trim the square cheese to match the round patty and bun. The bun to burger ratio is super important to me where I know exactly which buns to buy to match the burgers. Magnificent summary

      You can use avocado to substitute for mayo. And pineapple burgers are delicious. The pineapple acts just like onions in that it adds sweetness and juiciness to the burger.

    Tony omitted something in this video which he told me in 1999. And my burgers have never been better since:
    "Don't mash the shit out of quality ground beef while shaping the burger. You'll end up with a compact nasty meatloaf kinda thing. Loosely, gently press it just enough to hold together; it should fall apart in your mouth when you bite it. And, as always, never ever cook the shit out of it."

    • @percyhawkins716
      @percyhawkins716 2 года назад +1

      That's excellent advice to which I would add don't smash it down on the grill with your spatula when cooking it like they do at Fuddruckers. It squeezes all the juice out of it and makes it dry and tough and tasteless like the burgers are at Fuddruckers.

  • @MikeinCC

    The perfect burger, IMO, is one where you don't need *any* add-ons except maybe cheese. In college, I frequented a bar that served just such a burger. They refused to serve condiments with it. It was amazing, plain with cheese.

    I agree 100%. A good burger shouldn’t be difficult to eat. I hate seeing these two feet stacked high hamburgers. They may serve the creator’s ego, but doesn’t help my dining experience. As with pizza, a few quality ingredients well prepared is better than a bunch of crap thrown together.

    • @douglassun8456
      @douglassun8456 26 дней назад

      Agreed. Personally, I find that when you put too in too many ingredients, like too many toppings on a pizza, they tend to mask each others' particular flavor, so the point of adding any one ingredient gets lost.

  • @ronpaulOisOtigger

    You can actually make a pretty good burger if you look at how the classic fast food burgers are put together-- particularly the ratio of ingredients and how they are stacked within the buns. I did this with a whopper and a mcdonalds double cheeseburger and both times it tasted great.

    The best way to add lettuce IMHO is to chop it up and blend it with the dressing (mayo) to make something resembling cole-slaw. Then pieces of lettuce might fall off but it the burger patty will not slide off it as easily as off a bare lettuce leaf.
    Also, if you are going to have some veg on top of the burger, place it there while the cheese is still soft.

    My two favourite things on a burger or on and about a burger rather that is too often missing is first a proper toasted bun I hate those soft fall apart shit buns you sometimes get, and second is a nice dressing the best one for me is super easy to make you need mayo and a really strong and sweet mustard that's it, mix the two to your own liking and spread it on your properly toasted bun next time making burgers you will not regret it! :)

    Bun, cheese, meat, cheese, bun. Literally perfect structural integrity. If you want condiments add them to the bottom cheese layer, and if you want added topping, put them on the top cheese layer but be sure to dice them up. A full leaf of lettuce isn't as good as shredded lettuce.

      The mayo should be next to the lettuce and tomatoes and the ketchup and mustard should be next to the meat, however you decide to build it. A common trick/technique is to pile the lettuce and tomatoes on the bottom and put the pattie on top - makes it visually different and taller but sometimes harder to eat - but the mayo/veg ketchup/ meat is key

    I agree 100%. Nice soft bun toasted, good ground beef either fried or cooked over a charcoal grill, melted American cheese, onion, tomato lettuce and your preferred spread. And yes, it should be easy to eat. In-N-Out to me makes a perfect burger. Keep it simple and fresh.

    Why does it look like Anthony Bourdain has aged ten years since 2014?

    • @BenRangel
      @BenRangel 7 лет назад +32

      My bet is sun and alcohol.
      And the fact that documentaries and TV-shows have more flattering lighting than this video

    • @caseysghost8161
      @caseysghost8161 7 лет назад +7

      Yeah it looks like he got a bad burn or something, and he is certainly a boozer (or at least he represents himself to be). I'm skeptical about the lighting being a factor though, he looks just as leathery in the new season of Parts Unknown.

      Some people actually look worse when they have lost a little weight. They have got some wrinkles when they have lost some puffiness in the face. Penn Jillette is a one example.
      BTW, Anthony Bourdain is also a smoker.

    I think McDonald's has the perfect structure and ratio for a burger, however their ingredients are awful. I mean look at it this way, McDonald is a huge franchise and they've probably spent billions on research on the best way to structure a burger, so it's not a crazy thought.
    I've always hated restaurants that make their burgers where either the patty is too big height wise or when they have in-house buns where it's more than can fit in your hand.

    • @Amar7605
      @Amar7605 7 лет назад

      You are very correct on that. The equipment that McDonalds uses perfectly portions out the ingredients on the burger.

    “Am I making this better by adding bacon?”
    The answer to that is always yes

  • @xoxoLoveTrixie
    @xoxoLoveTrixie 7 лет назад +10

    perfect way to incorporate bacon in a burger is to mix it in with the ground beef. it's hella tasty.

    • @reprobatic5485
      @reprobatic5485 7 лет назад

      Doesn't that risk making the patty overly salty?

    • @xoxoLoveTrixie
      @xoxoLoveTrixie 7 лет назад

      nope. not from what i can tell. if it helps when i season it i dont add extra salt or i put very little.

      agreed. never been a fan of just 2 strips of bacon on top. especially because most places don't cook bacon well. it ends up not being crispy enough. it ends up just being a weird texture and rubbery. I don't understand the obsession about it

      jed52 from a professional point of view, when you have a restaurant, basicly you sell a certain kind of pleasure, And this have to be almost perfect in order to make money, that's why food gets really fucking serious when there's bussiness in between. I'm a cooker, and where I work we sell a cut of meat wich takes 24 hours of preparations And Shit, but The moment you taste it you transport to other world.

    Awww, c'mon now, Chef! You KNOW that raw burger NEEDS some finely-diced onion and a few sprinkles of 'real bacon bits' (pre-cooked of course) in that patty! Wanna' a 'secret that ain't a secret' for a 'killer burger? I got one! IT'S THE BUN! Mix one-half 'Powdered Ranch Dressing w/one-quarter fresh-ground salt, & one-quarter fresh black-pepper, mix well, and put in a 'shaker'....sprinkle both halves of the bun, and place both halves on the 'flat' grill...(adding a little clarified-butter to the flat first) and then LIGHTLY toast the bun until bun-edges are getting 'browned...then assemble the burger.People go ape-shit for these burgers! (do NOT 'put a layer' on the buns...just enough so you see it's 'sprinkled' and no more, or they will have a 'bitter' taste from the Ranch mix!) This sounds a lot more complex than it is...it actually takes only seconds to'prep' the bun-halves...and the shaker-mix has excellent shelf-life.(this mix is great for 'fresh-made' chips from a mandolin...I discovered over time that by 'scrubbing' the potatoes first before slicing (LEAVE THE PEAL ON!) the flavor is greatly enhanced for 'chips' and the sliced-chips have a MUCH longer 'bucket-life' than 'peeled' ones do...the 'rind-on' chips have a much better flavor and texture from the fryer...sprinkle them with the 'Mix' shaker while still hot...and people will order MORE because they taste so good w/a burger! (this works even better with 'Texas Toast' style buns)
