So know we are all older and everyone moved away I am glad to say that I can successfully make this albeit in pork. Just takes longer and emI will be making it today with chicken for the first time but it should be much quicker. Bad side is that now when every everyone wants posole (like Christmas) they ask me. Lol.... but it come with the territory. We have to keep traditions going.

If you snap the the bay leaf in half, you get more flavor. Just a tip my dad taught me. Whenever I make posole, I invite my youngest son 33 to join us. He loves posole ... I think I'll surprise him!
I really enjoy watching you do your recipes, if not for the fact that I'm a lazy man who lives alone I'd cook them all the time; as such I don't care to cook for just myself so I end up eating fast food and frozen junk.... But every once in a while I'll cook up something special for my grandkids but they're finicky little turds and half the time I end up eating it myself.....
I really like that you are doing the chicken with the red sauce I love it both ways I made some this last weekend and I ate all of it in two days now I need to get some more supply's I keep what sauce that was left so I will use that again but I will add more chilies ❤️

I’ve never tried canned pozole; I prefer the frozen or dried, makes a huge difference in taste I think. Looks good though!
