It's funny- I've eaten artichokes all my life. I never thought about it being an unknown vegetable for some people. It's great that you explained everything so thoroughly for those people who have never tried them or cooked them.☺
I love artichoke hearts preserved in olive oil (especially on pizza) but have never had them freshly cooked as I am the only one in our household who loves them and I thought it a lot of work just for me. I was always scared to mess around with artichokes cuz I had no clue but oh my goodness after watching this my wife put them in a pressure cooker like yours they came out perfect. You're a great cook and a great video person. Now we're going to eat artichokes all the time instead of just buying them in the store that's in those little glass jars for a dollar or so. I usually prefer shorter videos, but yours is so calming I just didn’t notice the time. I’ve never had a fresh artichoke and I’m old . I can’t wait to follow your recipe. The Galloping Gourmet, Graham Kerr (1960s) used to save all his vegetable trimmings, even washed potato peels in the freezer, and when he got enough, he would make a vegetable base broth and strain. Thanks! P. S. I have T2D reversed by low carb so I will have to adapt your dipping sauces.
Very few people in these artichoke videos actually put them upside down in the IP when steaming them. I believe you are the 2nd one I have seen doing that. I do it, as well though. If you load the artichokes with a filling of breadcrumbs, they will still mostly stay in place, due to the steam or wetness. We generally like just melted butter with ours or just plain mayonnaise, but these dips look good enough to try for a change. Thanks for sharing. ;-)
I bought some last night and forgot my vegan mayo! When she cut the stem off..i was like noooo lol I love steaming that part bcz it tastes just as tender as the heartchoke.
I love artichokes. Here in France we usually eat them with vinaigrette - made using dijon mustard, olive oil, wine vinegar. Delicious. Also a really nice dish (although time consuming to make) is to scrape the meat off the leaves and mix with chopped prawns (shrimp), cream cheese & lemon juice. You put that mix onto the base, having scraped off the choke and top with some whole prawns. Yummy ! I bet it would work well with crab too.

The top of each leaf has a spike! I'm sure you could leave them on but they can be really sharp. I also cut the top off to be able to spread the leaves apart a bit and allow them to cook a bit better.

A lot of recipes just use the heart and discard the leaves, I would eat the leaves as you do and save the heart for something else.😊

When I was growing up I would only eat the leaves! So I couldn't even imagine skipping all of those!
