- Learn how to cook and eat artichokes! I'll also show you how to shop for, store and prepare your artichokes. I love to steam artichokes. This is the easiest way to cook them and is perfect for a beginner.
An artichoke is an immature flower bud of a thistle plant. They are a round green vegetables made up of lots of leaves tightly packed together.
They have great health benefits; high in fiber, rich in antioxidants and offer a good amount of Vitamin C. I will link to some artichoke recipes below. Enjoy!

HOW TO COOK ARTICHOKES
3-4 artichokes, trimmed
1 tbsp extra virgin olive oil
1/2 lemon
filtered water
3-4 artichokes
1 tablespoon olive oil
1/2 lemon
filtered water
salt and pepper to taste
Instructions
Was artichokes under cold water. Trim the bottom of the stem and pull off any tough leaves near the bottom of the artichoke.
Using a scissor, trim off the thorny portion of each leaf. This will be about 1/4-1/3 of the leaf.
Using a sharp knife, trim off the top of the artichoke where the leaves are tightly packed together. I like to use a serrated knife for this.
Place a few inches of water in the bottom of a large pot along with a tablespoon of extra virgin olive oil, and 1/2 a lemon. Bring to a boil, then reduce down to a simmer.
Place the artichokes in the bottom of the pot (you should be able to fit 3-4 artichokes depending on the size of the artichokes and the size of your pot). Simmer for 35-45 minutes or until the stems are tender and the thicker bottom leaves pull out easily.
Remove the artichokes from the pot and once they are cool enough to handle, lay them flat side down and cut them in half lengthwise.
Use a spoon to scoop out the choke and any tough leaves near the center (they are not edible so you can toss them!).
Serve with fresh lemon, vinaigrette, and/or some garlic aioli. Enjoy!
NOTES
Cooking time may vary based on the size of your artichokes. Ultimately, you want the stem to be fork-tender and the leaves to pull out easily. Let this be your guide.

I am almost totally blind and I want to thank you for several things. First of all, thank you so much for the wonderful description you have about how to fix artichokes. I have been buying the frozen artichoke quarters and they are very good, but I have always wanted to know how to steam artichokes. No one ever told me how to fix an artichoke from scratch and what the choke was. Every recipe says to remove the choke, but I’ve never known what it was. Thank you for not doing what so many RUclips food video producers do and just provide music and pictures without speaking. They don’t seem to realize that a person doesn’t have to see to be able to cook. I have subscribed to your channel for that reason and also because I’m interested in seeing more recipes from you. Thank you so much.

I find that really hard to believe. I’ve looked at dozens of these recipes trying to find the exact way my mom made artichokes. Every single one mentions cooking and eating the stem. I’ve actually never heard anyone mention discarding the stem until your comment..

Just had my first artichoke and it’s so yummy. Thanks for detailed explanation of how to select, store and cook them. Unfortunately I did not look up on how to deal with them after purchasing, and I did not store them properly so the whole thing turned brown... but was still yummy nonetheless.The ‘heart’ was still plump and flavourful after cooking.

Nice Video...Self proclaimed Chef Michael here. I have been eating artichokes for over 40 years. I have come across some delicious ways to prepare them. Instead of boiling the artichoke, I steam it with chicken broth in a pressure cooker for 16-18 minutes (start the timer after the 1st steam release that indicates you have the pot pressurized, approximately 2-4 minutes after stove is lit, 16 mins for small to medium 18 for large size artichokes) For dips, my favorite 4 are of my own design, (1)a butter dip: butter, molly McButter flakes, onion powder, onion, and salt. in pan add the onion, melt butter, and rest of ingredients mixed in (2) Lemon Curry: Mayo, Jamaican curry powder, salt, onion powder, 1/2 a juiced lemon, lemon zest (3) White Grape Balsamic: Reduce 1 cup of White Balsamic vinegar with rosemary and thyme for 20 minutes, let cool, and salt & pepper to taste preference and last (4) Mustard dip: Equal parts Honey, Dijon, Brown mustard, Grain Mustard seed in white wine, and Chinese Hot Mustard (store made not in packets)

Love it!! We added a little bit of cumin in the boiling water. We dip the edible part of the stem in a tahini sauce made with water, fresh squeezed garlic, lime and salt. Yummy!! Learned a lot on handling it today. Thank you.

My mum stuffs a mixture of bread, olives, parsley soaked in white vinegar (can't remember if there is anything else) in between the leaves where possible and steams them like this. Delicious! that bit of vinegar really makes a difference.

My momma cooked artichokes regularly in the 80’s. She steamed them whole and served them with a bowl of melted butter. We peeled the leaves one by one and dipped them in butter and scraped the bottom of the leaves until the heart was reached… which was the best part. Then the heart was dipped in the last of the butter and the it was the most unique and wonderful taste!!! Artichokes cooked whole are a hidden secret wonderful appetizer!!! Try it:)

@@Anne--MarieI think perhaps humans having figured out fruits start as flowers or blossoms, someone got the idea that perhaps this tender bud had some nutritional treasure within. I used to feed them to cows for years but never even thought to cut one open until today and I think I did a good job harvesting it. Even figs have flowers but those flower clusters are contained within and are cross pollinated by a very tiny wasp. The Capri/goat (bad) and Smyrna (good) fig. The wasp doesn't know the difference but enters each fig through the bottom cross pollinating. Biblically this is a significant symbol and goes hand in hand with the wheat and tares ( zewan) illustration or parable.

There used to be a show on lifetime like at home with Katie brown. One episode was a meal with artichokes and I wanted to make it for Easter dinner. I ended up serving the whole artichokes and I had cut out all the hearts with the choke part lol. My mom asked her husband how to eat it and he whispered "you don't." LOL. I live artichokes and just by the cans ever since that fiasco. I love them in a pasta dish with chicken, spinach, capers, lots of lemon, butter, and a little alfredo sauce. I top that with parmesan cheese. I've been eating this dish for 6 or 7 weeks lol. It's all I want to eat and mixed berry pie. I guess it checks all the marks my body needs bc I never get tired of it. I think I've gained some weight from this diet though so I may need to cut out the noodles.

I love that you went into as much as detail as to describe *how* to eat the leaf and what it looks like when you've properly eaten it. I literally had no idea what the inside of an artichoke looked like let alone which parts I was supposed to eat.

Thanks. Just picked 2 artichokes from the garden, planted because the plants are beautiful, really graceful, and I have baby plants from letting them seed 2 years ago. This video is excellent, I'd no idea how to prepare them. Useful tip about using the stem, I cut off just flower buds with secateurs, might take a saw next time.

Thanks for the lemon tip! I grew up eating them stuffed! Delicious and a full meal! That’s my favorite way to eat artichokes. Stuffing was a breadcrumb and egg mix with garlic, etc or a meat based stuffing. Breadcrumb one was my Fav!! Delish!! It’s possibly an Italian style. Thanks!

I picked 5 fresh ones yesterday. Issue is ANTS and APHIDS , they LOVE to climb in between the leaves..I washed them and (SOAKED) them 3 times and still, darn black things. Hopefully I got them all out. I JUST put them in a zip lock bag, this morning.. took all the air out first, then into fridge.....hope to cook them today or tomorrow. Cheers, great video by the way. I love artichokes! My family, not so much. I usually buy the jarred ones in water. I use them in quiches or on pizza or spinach artichoke dips. I’ve only had a steamed one once in a restaurant. Sometimes I just eat them right out of the jar, but I always keep plenty of the jarred ones on hand. Thanks for the video. I will definitely try making some fresh ones.

My mom use to make all the time. While its being cooked she made each of us a dish of melted, lemon & garlic so when done we dipped it in it. At times w had spaghetti with butter and cheese. WOW my mouth is watering thinking about it. 😋

I grew up eating artichokes. They grew them in central California where my mom was from and I was born. This is pretty much how I make them, although I didn't learn the cut in half and scoop out the choke till I was an adult. So much easier than serving whole! We served with with a bit of melted butter like you do with lobster often, for dipping. Never tried the mayonaisse dip.

Artichokes are one of my all-time favorites vegetables. Yummy. This is a great video for beginners. She's right. The stems are almost as good as the heart. Not thinking to score them, I've always boiled my artichokes for 2-3 hours. Expect them to float. Whatever. Boiling them in their own water only intensifies their flavor, I think. You also don't have to worry about the pot going dry. In any event, using water is by far the best method.
I cook them enough to get them nice and soft so that the lower leaves pull off easily as she showed. I eat the soft, nice-smelling veggies with plain mayonnaise or aioli; no lemon or oil. That's how my grandma introduced me to them back in the sixties. I never thought to cut them in half in order to scoop out the inedible part. That's a good tip.

FWIW, we eat artichokes regularly, but we prepare them using a pressure cooker (10-12 minutes, depending on their size). We also put a potato nail up the stem to aid in even cooking. We tend to dip them in a mixture of mayonnaise and tarragon vinegar.
Oh, It's now on my shopping list, thank you so much. I know it sounds silly but what brought me here is the bowl I bought. It was an artichoke shaped bowl made by staub and I was looking for this strange thing to fit that bowl.
When I crave artichokes but can’t find them I steam the stems of broccoli and “pretend” it’s an artichoke haha. It’s almost as satisfying and super delicious. It’s 1:24 am and I’ve never needed an artichoke more in my life🤣

I made a dish of rice , star with garlic, onion sautéed in olive oil add pieces of chicken, peas ,carrots and artichoke, chicken broth , salt, pepper, Cook until rice is tender , delicious 😋
