I love Colombia hot chocolate called corona. A Colombia friend of mine told me that this type of chocolate needs to be heated enough to make it easier on your stomach. She said to let it bubble up like it's going to boil over 3 times. I tried it and it worked! It also tasted better. I do also only ad the cream after it's in my cup because it helps cool it to a drinkable temperature for me. So basically if you have tummy issues after drinking hot 🍫 try this trick
My Godmother always made our hot chocolate on christmas eve to go with our buenelos, tamales, rice, refried beans and a sunny side up egg. My Dad always made the quart and pint on hot sauce since we grew all the peppers and tomatoes. But getting back to the chocolate- I wish I had the full correct recipe but she always used 3 PET CAN MILK, water to rinse the can, 3-4 sticks of cinnamon, and 4 of the Abuelita cakes. She would break them where they are scored. Just before serving add the same kind of vanilla you showed. I have been using that same brand for year's in all my baking when I want a richer vanilla flavor. And yes she always used her wooden stick( can't remember the name of it) and the secret to no skin on top is to stir it constantly and the lowest setting of your stove. She always made sure the top of the hot chocolate had a thick layer of froth per cup! 😋 yummy!

Ghirardelli chocolate is good and the ice cream sundaes they make in their store are wonderful but if you haven’t tried Guitard chocolate (made just miles away from Ghirardelli chocolate) it may make you a convert. I’m not sure if they make a powder chocolate but if you like See’s Candies you like Guitard Chocolate, it can be found in Safeway stores.

Actually traditional Mexican chocolate nowadays just uses a “tablilla” with is basically a chocolate disk packed with sugar and cinnamon and that is dissolved in milk. Baaaaack in the day it was just cacao paste dissolved in hot water sweetened with honey. It was strong stuff.
My boy's is all about some Hot Cocoa. I'm gonna have to make this with them and see the difference from the packets we usually buy. I gotta feeling they will love it😻 We like adding whip cream on top and crushed permanent candy 🍬 it's delicious:)) My oldest Hot cocoa puts him to sleep everytime it's cute LoL That's what we do on school nights when he's not sleepy 😉

I've made hot chocolate in my vitamix. The Ibarra works out great in the blender and the liquid heats up like a soup in the vitamix 😊
