My daughter recently decided to follow a vegetarian diet and I've had a tough time finding recipes that will work for both her and the rest of us meat-eaters,without much modification. Thank you for sharing this, it's going on this week's dinner menu!

Great, simple, and fast recipe. The salsa was very tasty too, as promised. Some citrus juice is a nice touch, I usually use that to cook the refritos. I find it really gives them a refreshing crispness. I’ll just add too that the ingredients were a dawdle to find.

Question about crema: everytime I find it, it is shelf-stable in a jar with a ton of additives. If I keep looking, will I eventually find a refrigerated version?This recipe looks amazing!
Wonderful video - thank you! Quick question please. The version in the intro (0:35) looks totally different? Was that with roasted poblanos - sauteed with??? Any tips for that version would be appreciated, as we grow so many poblanos and just love them.
Questions don't really get answered here. I thought they looked like green chilies because poblanos are a darker green, but either one would be good like he said, the bread and beans are traditional, but put whatever you want on it. Roasted poblanos sauteed with onions and garlic would be yum. What was underneath the chilies looked like a breaded chicken cutlet. It was a completely different sandwich than what he made. I just Googled molletes, and there are lots of recipe variations.
Be careful with Panela if you’re vegetarian. It can be made with rennet (like Parmesan), and rennet aka “enzymes” is not vegetarian as it’s made from the stomach lining of young calves (they are killed for their rennet). I’ll stick with paneer which is always vegetarian 👍
I don't want to show hate or anything, his recipe looks decent.. but I don't like it when he says "open face sandwhich".. it's just called MOLLETE.. there is no translation.. you don't translate pizza to "open face flour tortilla," do you?

Yes, that would be good. I was going to suggest saganaki cheese .... that fries up the same way. Either would be good substitutes.
