I’m obsessed with this recipe. I’ve been making it since it’s first edition that was published in a Bon Appetit video. This pancakes leave you full and they are guilt free cause you’re eating chia and oats and everything good haha
I remember watching this recipe back on the BA channel ages ago. There was a mini series with Carla (there was a whole grain stir fry, and greens with polenta too!), and it was one of my favorite things BA ever made. Super happy to see it again!
This is so wholesome, you can tell she's more worried about her kids' mental AND physical health rather than just "if you eat pancakes you'll get fat!!" Instead of associating food with shame and restrictions, she's just trying to make sure they're getting the nutrients they need.
I made these today and they were amazing! I topped them with a bit of agave, peanut butter and blackberries. I’m on my own so I made the full batch and froze them for easy breakfast throughout the week. Definitely a new fave. Just ordered your book!
look at your cute matching outfits! also, great pancake tips and I'm looking forward to trying these. I like to adjust the bicarb up and baking powder down just a bit to account for the bit of slightly acidic sourdough, but you definitely don't have to. this look perfect!!!

Now that Rick mentioned lemon curd I want one with blueberry compote and lemon curd in the cream. 😋 But don't worry about sugar in the pancake batter if it's doused in syrup. I grew up on sugar-free German-style pancakes and they always browned and were plenty sweet with jam, nutella, cinnamon-sugar mix, apple sauce, or jam. I always put things like vanilla or cinnamon into the dough instead to flavor them.
I made these twice over the weekend and they are UNREAL. Had them with lemon curd and blueberry compote and didnt get a single bit of the fatigue i get every time i eat a sweet breakfast! They also make up for the worst part about regular pancakes: no texture!! I love the slightly seedy texture 💜
These look amazing! Quick question: If I'm unable to find hemp hearts, should I bump up one of the other grains or will it still be thick enough without it?

I made these! But....they are total health biscuits this time. I need to add more liquid for the ingredients I have. Lol. But like, fresh maple syrup from just outside of town, pure heaven. Will be trying again next Sunday!

Delicious!!!! THE winning pancake recipe. My consistency was off due to my take on buttermilk. I mixed milk+kefir. My ratio was a bit off. And used brown sugar. Still Yum all the way.
I'm with Rick and Cosmo on this one, the pancake is a blank canvas on which we paint with the toppings 😊 I do have some blueberry compot leftover from my last cheesecake, so that's gonna be great with pancakes 😄

You can freeze buttermilk in recipe portions. You can always have buttermilk handy.
