Alot of the games I play are running perfectly so am happy with that , only pinball FX doesn't which I did doubt as some of the consoles struggle with that game. I have other methods but is nice to be able to play the majority of my library on the Chromebook.
Go to Google and type Chromebooks compatible with Steam Linux Alpha Chrome OS. You should find articles that give a list of the Chromebooks that can use it. Having a 64 bit Chromebook doesn't really mean much in relation to having enough performance to run Steam Linux Alpha. You ideally need Intel i5 eleventh generation with 8GB RAM as a minimum.
I'm not 100% certain how much space it takes up. You also need to consider the games you want to install as well. Make your Linux partition as big as possible, which will depend on your overall ChromeOS storage. Just make sure you leave some for ChromeOS.

After switching to beta and going to flags I type in borealis and nothing comes up

You might not be using a Chromebook that is compatible with Steam Beta.
