I don't know where I found this out (I watch a LOT of cooking channels) but apparently you CAN use olive oil to cook with, it's extra virgin olive oil that has the low smoke point and is just for dressings/dips and such. Just in case you had normal olive oil I wouldn't want it to go to waste! (Also I really enjoyed this video it was v calming and v realistic thank u)

Hi Lucy! I have a strong interest in nutrition, and I remember once reading it's possible for the body to crave what it's lacking, so you could be craving meat as your diet is lacking in protein? Obviously plant proteins are an option so upping them may kick this craving a little more! All the best xx
Try roasting the beetroots! I find them quite bitter but roasting them in just oil/salt/pepper/rosemary with a liiiiiitle bit of sugar for sweetness is absolutely delicious! Really good in cold roast veggie salads :)

Fellow gluten intolerant here so it was nice seeing a what I eat that I can relate to ☺️, might check out those larabars. Also highly recommend trek bars particularly their flapjack range👌🏼
Beetroots are so versatile - you can pickle them with vinegar and water, and they'll be good for months. Or boil them like you would potatoes, and then I just wait for them to cool down and use them in salads/sandwiches/bakes/soups/whatever as you normally would. Or chop and roast them with other veg. So delicious and versatile!
I love beetroot with apples, potatoes and carrots, all cut into wedges, seasoned with salt and pepper, drizzled with oil and roasted in the oven for maybe half an hour, maybe a little more :) it's such a good autumn dish, but probably just as good in the summer :) just if you needed a bit of inspiration for what to do with your beets.

Hey, the olive oil and cooking thing applies to extra virgin olive oil. Virgin olive oil is meant for cooking with :) [source is my italian fam who grow olives used to produce oil in puglia]
Oh! I'd heard the opposite of what Lucy said; namely that olive oil has one of the highest evaporation/burning points (?) and that you could definitely heat it up real high in contrast to sunflower and other oils, because at their burning point they lose their nutrients. But good to know this, would I better keep the extra virgin for salads to sprinkle on?
@@StrongImaginationA its not that you can't cook with it but the flavour of extra virgin is more preferable and in italy is produced for things like salads, as you say. Whereas plain olive oil is made to cook with.
Hi Lucy! Love this! Just want to say if you’re having issues with wheat but can eat sourdough it might be worth looking into the low fodmap diet. It is really intimidating but It’s the only thing that has truely helped my ibs. For me I found my biggest trigger was the fructans group, which includes wheat, garlic and onions. I find if I generally avoid those three things then I can manage my symptoms. I can eat sourdough because the fructans get fermented in the process of making the dough and it’s easier to digest.
It's actually very good that you were craving meat when ill, protein is vital in white blood cell production and it's advised to eat good quality protein when you're sick so that you can fight off the virus quickly. I'm currently studying nutrition at uni and I learnt that fact in one of my lectures!
You can definitely use olive oil for cooking. In Mediterranean that's all we use. Also, the good thing about olive oil is, you can eat the veggies you cooked with it without reheating again as well.

I'm gonna be a Food Wanker™ (with possibly a hint of "um actually" here, so apologies for that in advance...) Re: Olive Oil - you totally can heat it up regular olive oil, and it's delicious and good. What you're talking about is Extra Virgin Olive Oil - and everything you said about it is dead on. Althouuuuuuugh if I'm making a bowl of pasta and want the most simple dressing, heating it up very very gently and sizzling some garlic and chilli in there for about 10 minutes is a proper beauty.
maybe try going vegetarian for a few days a week rather than going fully veggie straight away. Also, listen to your body and eat what your craving. But most importantly, try and get lots of iron in your diet because if you don't eat meat you need to get it from other sources. I would personally recommend taking a vitamin supplement. Hope this helped. Sorry if this doesn't help. x
I agree with the other reply when I say do it gradually! Every little helps, and that could mean a day or two a week without any animal products, which would still help the environment! Don't be put off by the price of meat subs, I personally don't find them THAT expensive, but things like Quorn are always on offer, especially in Asda, you might just need to shop around. And of course, veggies are really cheap! I would also suggest maybe trying a couple of more solid meal subs as you gradually go vegetarian, meaning I'd suggest you try things like Quorn's pies and their nuggets, both absolutely fab... good luck!
Beetroot tips/ recipe ideas: shred/grate the raw beets (like you did with the apple) and have them in a salad (the colour! crunch!) They go super well with Walnuts, feta, spinach etc. You could also make Beetroot Hummus, Beetroot Falafel, even Gnocchi, put them in a hearty Soup, your Morning Smoothie or go simple with Balsamic Glazed Beetroots. The sky's the delicious limit! Call me Dwight Schrute, but I love me some (Beet)root!
For the beets, grate them (or finely chop) and throw them in salads. I grate/chop up a couple - along with some carrots - and keep them in a container so I can easily make my salad much more impressive than just mixed greens and goat cheese.
My partner boils his beets till they are cooked. But I prefer to roast mine. Peel and chop them. Drizzle in oil, S and P and roast on a tray in the oven. Yum!

If you react to gluten containing products, but you can eat sourdough then you should look into the low fodmap diet. Most people who think they are gluten intolerant (and aren't coeliac) are actually fructan intolerant (So you react to most wheat products, garlic, onion, etc)
Try corn pasta, I’m not gluten free but I try to not eat a lot of gluten inside the house (when I go out I do eat gluten) and corn pasta is the one that at least for me, is the most similar to normal pasta
odd question but what grocery stores are good to buy food at in the uk? i’m moving to england for a year for university and i don’t know anything about uk supermarkets cheers from australia😊
Philippa Jones i think standard supermarkets like tesco, sainsburys, coop, asda are just fine and you’re bound to have any (or all) of those close to where you live. then there’s the fancier ones like waitrose or m&s or online like ocado. i think finding what works for you will be easier when you’re actually here though. you can also always find sunday markets which end up being p cheap sometimes! But all that aside all of them are good enough in my opinion! none of the big supermarkets have a bad rep when it comes to food (i personally prefer sainsburys)
I’m a student too - so to save money shop at Aldi or Lidl. Larger supermarkets are better than smaller “express” type ones cause they up the prices a little and there’s less choice. From cheapest to most expensive I’d say it’s Lidl/Aldi; then Asda, Morrison’s, co-op & Tesco; Sainsbury’s; and finally marks and spencers and Waitrose.

Apparently they can be labelled gluten free in Europe and the US but not in Aus as some people still experience symptoms eating them
So normal oats aren’t GF, but when they’re prepared in factories which don’t process wheat, they become GF. I don’t react to the GF ones so I eat them!

There are people in desperate need of help in the world, and instead of young people aspiring to be teachers, doctors, scientists, social workers, nurses, etc, they inspire to be "influencers". Aka.. Talking about yourself all day every day but never actually SAYING anything. Idk I just can't wait for this whole "influencer" bulshit to blow over and see a bunch of spoilt brats in their 30's having absolutely no clue how to live an actual responsible and satisfying life. Just my thoughts. I've unsubscribed now. I used to kinda like these types of videos when I was at uni, but now i've grown up a little bit I have grown to see just how fake it all is. I honestly think it's damaging and not at all helpful.
i understand that, i really do. and i agree to an extent. but i’m sure most youtuber who don’t edit do have other business stuff they do. and also, she’s an entertainer and does a lot of self help stuff which is really helpful for people! i get it’s not a particularly difficult job (or at least doesn’t seem like it) especially if editing is taken out but there’s more to it than just the filming aspect.

I had tonnes of beetroot in an able & Cole box. Pickled some of it and with the rest made beetroot and carrot fritters. Super easy and yummy

Beet hummus is wonderful! Boil them whole then peel them, then blend them up with tahini and other hummusy ingredients

Aldi is super super cheap but if you won't be living near there, Asda is the cheapest of the main supermarkets!

Just my thoughts. I've unsubscribed now. I used to kinda like these types of videos when I was at uni, but now i've grown up a little bit I have grown to see just how fake it all is. I honestly think it's damaging and not at all helpful.
i understand that, i really do. and i agree to an extent. but i’m sure most youtuber who don’t edit do have other business stuff they do. and also, she’s an entertainer and does a lot of self help stuff which is really helpful for people! i get it’s not a particularly difficult job (or at least doesn’t seem like it) especially if editing is taken out but there’s more to it than just the filming aspect.
This trend of ‘what I eat in a day’ is honestly so narcissistic!
