      I would never pasteurised an egg...I like my eggs fresh and alive not dead. Dead eggs are more likely to have pathogens. Buy healthy fresh eggs unpasteurised unwashed free range. In ireland all our eggs are like that and I've never heard of anyone ever getting salmonella or ecoli from raw eggs. American factory eggs they wash the eggs which makes them susceptible also they treat the chickens so bad they're up to their knees in their own shit and dead brethren ...which no amount of pastyrizing or washing will wash away such horror. Just buy good eggs local. If you cant get that get your own chickens and give to neighbours.

      Same here. I have never even thought about it. Why do you need them to be pasteurized? I’ve never run across a recipe specifying the eggs need to be pasteurized, and I’m old as dirt.

      @donnasalvador678 I would say anything that's not cooked and uses raw egg? Like maybe a frosting or some whipped concoction. I'm sure the French do it.

      Nursing homes have to have pasturized eggs, something about bacteria and their decreased immune systems...?but, they get cooked?

    Huh? All store bought eggs are not pasturized in the US? I thought it was similar to milk, that it doesn't come unpasturized 😮

      I used to think that until one day when I decided to make mayo and I realized that the eggs in my local grocer were not pasteurized. Most shell eggs in the US are not pasteurized.

      Nah, we just wash off the protective coating on the eggs so they have to be refrigerated. But I think they might last longer unpasteurized? If you can only store them for a week afterward. Unsure.

      Maybe, but it's the flour used in the rawvcookie dough that needs to be baked before using in the raw dough

    Thank you!! We have chickens and I never knew this. I’m forever pickling hardboiled eggs in leftover jalapeños, pickle, or sauerkraut juice 😆

      You can store your unwashed ( wipe them lightly) in pickling lime and water for up to 2 yrs. This info up there is simply unnecessary.
      Look up "Glassing eggs"

      No, that is why they tell us to not eat raw eggs. This way you can use them raw in a recipe without the chance of salmonella poisoning.

      @@along5925people who raise chickens have smaller setups, and theoretically take better care of them, than a huge factory, where everything is cramped, and the birds are so poorly taken care of, and so close together, that disease may be rampant.
      Those are the nasty eggs.
      Now I’ve eaten raw cookie dough for 48 years, and never had a single issue. But that’s the reasoning. It COULD have salmonella.
      Now that I raise my own chickens, I know how clean they are, because I change the bedding on a regular basis. They roam the yard, rather than cramped thousands in a building, three to a tiny cage.
      So I’m even more confident that I can eat the raw cookie dough.
      And boy, do I ever. 😉

    I have never heard or thought of pasteurised eggs. What is the point due them to be pasteurised… please tell us more…
    So all my life I have been using unpasteurised - does it do any harm..

      It is for when you want to make a recipe that calls for eggs, but doesn't cook them. Eggnog, French Silk Pie, homemade Mayonnaise, etc.

    I have been cooking for the better part of 70 years. I have raised my own chickens, cooked with them fresh from the chicken, still warm ,and have never pasteurized one single egg, even when making fresh eggnog. Not dead yet.

      Homemade mayonnaise, some sauces, some meringues, some ice cream recipes, eggnog, swedish egg coffee, and some people might throw a raw egg into a smoothie or just mix it into a glass of milk. I think Marilyn Monroe used to do that often. It used to be more popular than it is now. My dad will sometimes poke two holes into an egg and just suck it out. It's weird but he likes it.

    Use the sous vide setting on your instant pot. Pasteurized eggs are great for eggnog and home made mayo.

    If you have a sous vide setting on your pressure cooker or a sous vide immersion cooker you can do this easier by setting the exact temp.

    reason need to have pasturized eggs is for to make homemade mayo or oldfashion eggnogg also if you make homemade icecream too it helps cut down ecoli a little bit... if makng homemade mayo do not use canola or soy or seed oils ... use evoo or avacado or coconut oil all cold pressed oil as well...

    Pasteurize your own eggs
    Pot of cold water with as many eggs you would. Cover with an inch or two with water. Need a thermometer to bring temp up to 140’F. Small to medium eggs 3min. Large to extra large 4-5min. If temp starts to go up add a little cold water to keep the temp close to 140’F as possible. Put into an ice bath then dry them off. After the pasteurization you can use right away or within a week.

    I’m not sure but most eggs at the store are In fact “pasteurized “ and that’s why they’re kept in the fridge. Not many countries do that for example I’m Mexico eggs are kept out at room temperature.

    ❤😂 sounds good but I think I would cook them. 😮 Eggs are in a cold water. Are the eggs being warm to the temperature.
    Then put in a ice cold water.
    How long will the eggs keep in refrigerator after pasteurizing😅

      First no question is dumb. That’s how we learn. Only some are. If it says pasteurized on the carton then yes. If not then no.
