    Hatch (Hatch, NM) chiles get all the attention, but a few hours north is Pueblo, CO. And those chiles are excellent, too.

      @@ChilesandSmoke Went there almost 20 years ago to check out the Colorado state fair (don't bother). But I got a line on where the farms and roasters were east of town and picked up half a trash bag full of freshly fire roasted Pueblos for $20. Man, did the car smell amazing on the way back home.

    ADD 1 TBSP GARLIC POWDER! It won't change the taste but it's necessary to help "calm" the chile so it doesn't upset your stomach! This was Grandma's advice, a Native New Mexican!

      I definitely added salt, but I don’t use vinegar for it
