This is a very old and rare apple peeling machine, made in 1898 by Goodell Co USA
It was a tough restoration, this machine wasn't designed to be disassembled,
it was tough.
I wanted to recreate the rivets but I don't have a lathe... So I've had to modify the old ones.

Wow, this one was seriously seized. And I knew from the start that it would end with an apple pie! ;)
Works like a charm. The "auto eject" feature is seriously cleaver.
Looks better in glossy black and gold than the original (...hints of it behind the rust...) hammered green. That's funny how a paint scheme can blend a close to a century old equipment to a contemporary kitchen.

c'est très satisfaisant de vous regarder déboulonner, dériveter, décoincer, désassembler toutes ces petites pièces qu'on imaginait même pas comme faisant parti de l'objet. Quelle patience vous avez, ça s'appelle la "passion" j'imagine haha Belle restauration encore une fois. J'aurais bien pris une portion de tarte aux pommes, mais j'y aurais ajouté un soupçon de cannelle et de sirop d'érable :-)

I remember using a "machine" much like this when I was a youngster back in the late 40's early 50's. The one I used had a small round cutter head rather than a blade.

This is one of the great restoration video of all time; the contraption itself is genius. The restoration work and finish quality is perfect and the photography and editing are professional grade and the all around skills are overwhelming including the pastry chef qualities you have. Chapeau.

For things like this I use between a 10:1 and 20:1 mixture of water and Molasses, and let it ferment for a week or so. It removes paint and rust and unseizes stuck iron/steel parts and cleans oxidised copper as well: just don't let it touch aluminium, or zinc alloy parts; or they'll disappear !

Be carefull with heating hardened parts - springs, knives, some gears, etc. IMHO, don't heat it at all, only oil and rust remover/electrolysis to disassemble.

How do you know what to use on what? Do you have a chart that lists the types of surface and what will remove possible coatings? It’s amazing to me how much you know. And how white vinegar is so handy!
Way much better than vinegar 👉 Hydrochloric acid 🤟 You can see the process on my latest vid 😉 And I just learn watching other people on YT 😌

I dimly recall my Grandfather having a similar (albeit less complex) device, but I don't think he used it very much.
