Looks better in glossy black and gold than the original (...hints of it behind the rust...) hammered green. That's funny how a paint scheme can blend a close to a century old equipment to a contemporary kitchen.
I remember using a "machine" much like this when I was a youngster back in the late 40's early 50's. The one I used had a small round cutter head rather than a blade.

I dimly recall my Grandfather having a similar (albeit less complex) device, but I don't think he used it very much. The apple pie looks just amazing; I have never seen that technique before.
This is so cool! My parents have one on these in their basement, but in much better condition. I remember using it back in the ‘70’s to peel a bunch of apples. We had several trees in our yard and there would be so many apples it was hard to get them all. Typically the ones that fell to the ground would be consumed by ants and bees! How do you know what to use on what? Do you have a chart that lists the types of surface and what will remove possible coatings? It’s amazing to me how much you know. And how white vinegar is so handy!
