    It's Interesting that there are people out there claiming that Linoleic acid is no better or no worse for you that any other type of oil. They even back their claims up with lots of studies that support their claim. Unfortunately all the studies they reference are ones where the participants consume the oil straight up and are not used for cooking. It seems to me that the deep frying with oils high Linoleic acid is the key point. Thanks Doc keep up the great work.

      I can tell you from personal experience that it definitely is worse. I've been eating fruit, meat, and only pasture raised duck fat (high linoleic acid). My lipid profile is not great. I have low HDL (around 85), high LDL (around 170), and high triglycerides (around 300). Everything I eat is organic, or grassfed & grassfinished.
      I should mention my height, weight.
      I'm 6'0 154lbs.

      @@shanerajotte I am mixed up as well.Spain is set to become the longest living country in the world and they eat sugar deep fried foods on a regular basis.They sure use olive oil but the second most used oil in Spain is sunflower which is 68% lineolic.

    The only vegetable in my diet is organic potatoes, which I fry, bake or roast them in European butter. I was on a high vegetable diet( where I felt great in the beginning), but within few months I developed a severe immune disorder, to the point that every night I was covered in extremely itchy hives. I completely reversed the disorder by only eating organic meats, eggs, cheese and butter.

    Texas roadhouse cooks their burgers in a tallow/butter mixture and I'm pretty sure they grease the grill with it too because they have so much. They make the tallow right there in the bakers oven.

    Loved the podcast you done with Thomas delauer, huge fan of Thomas' and have recently become a fan if your content.
    I've been following keto quite strictly for around 3 years and carnivore for the past 3 months or so.
    I'm a type 1 diabetic and feel it hard to process how adding honey and fruit into my diet would benefit me in the long term due to the high prolonged spikes that would be experienced.
    Would love to see a video going into more depth on this subject🙏🙌🙌

      Adam japp as a Type 1, you should not have fruit or honey. Perhaps, on occasion, you could have some lower carb fruit like organic strawberries, raspberries. But then you’ll have to be disciplined about your insulin. Even type 2’s should not have fructose unless they have reversed their Diabetes. And even then, low carb berries only on occasion. T2D runs in my family, and I was pre-diabetic 6 years ago. Recently got my A1C to 4.9 🎉

    It's almost impossible or very expensive to escape all the shit that is in our food and environment today. If you escape the seed oils and all processed foods than there's still pesticides, forever chemicals, micro plastics, radioactive isotopes, heavy metals and i'm sure the list goes on.
    Most realistic thing one can do is cooking every meal yourself, don't buy processed foods and don't use teflon pans. Everything else gets super expensive and/or complicated and is not realistically achievable for the average person.

      Also, buy organic fruits, and grassfed grassfinished meat, and organs. You can prioritize things in your life to be able to afford. They were so manys I did not need, which I stopped buying, and applied that money to my food.

      I buy all organic and grass fed foods and cook majority of my meals at home. I choose fragrance, chemical free cleaners & bath products,etc. With that said, it is time consuming and trying to remove all the toxins can overwhelm me, yet the investment is worth it. & what ticks me off is that people also forget the food rules apply to our pets too. A huge number of pets being fed dried kibble with no nutrients dying of cancer. Feed pets moisture rich protein foods for longer life. It's what makes them thrive. I wish the marketing of products for profit would stop and the focus be concentrated on education to health and wellness. I'm disgusted in the standards the U.S states is acceptable.

      @@bellakim9404 That's great! Be aware that not all grassfed meats are grassfinished. A lot of times they say grassfed, but fed them lots of grains at the end of their life to fatten them up. It's unhealthy for the animals, and us. It's should say grassfinished, or 100% grassfed. 👍

    The research I’ve done suggests there are a number of problems working together, but industrial farming seems to be the main culprit. The foods that we’re getting aren’t nutrient dense enough to satiate our appetites, so we eat more and more. The soil has been depleted of those nutrients and we’re compensating for it with fertilizing chemicals instead.

    I would also like to add that the constant activation of mTORC1/mTORC2 (primarily via insulin and not leucine/arginine) and not enough activation of AMPK is another driving factor of metabolic dysfunction and cancer/autoimmune diseases. We in the west are told to eat at least 3 meals a day (or 5 smaller meals throughout the day). That causes constant mTOR activation which can lead to a buildup of dysfunctional and cancer cells in the body.

    Buffalo Wild Wings claims to use tallow for their frying. Hopefully it's not diluted with other oils, since that is the last place i can buy pre-cooked fries/potato wedges from in my area.

    Dr Gundry suggests that raw organic cold-pressed canola oil (consumed raw as well) can have a profound protective effect on the body, especially when consumed with high-lectin foods. I’m not clear on the mechanism of action. What’s your assessment?

    All processed foods should be cooked in beef tallow or lard. Period. That is what we've been frying foods in for hundreds of thousands of years and it's what we're evolved to eat.

    I had a bloodtest done recently. My levels of linoleic acid are slightly above the recommended level range. So not terrible but could be better.
    So now I am rechecking my foods to find out how I can reduce my intake.
    I use canola oil, but maybe I can use less or switch it up with olive oil or ghee. I try to be careful with heat while cooking already and use oild sparingly.
    Maybe I can cut down on Tortilla chips though. :(

    I eat red meat basically everyday on the carnivore diet and my blood results are perfect always and I get it tested every 3 months. Cholesterol's perfect everything. Blood sugar is doing awesome better than way better

    McDonald’s used to cook their fries in tallow until American were convinced that tallow was a villain, so they changed to something claimed to be healthier at the time and now we know that was all a bunch of bs!

    I'm sure you have covered this but I would have to sit through days worth of content to possibly find it. If plants are so toxic due to their defense chemicals and whatnot, how do people see such dramatic improvements from following a whole food plant based diet? I don't think a WFPBD is optimal long term, but the data and anecdotes are undeniable. Everything from heart disease, diabetes, inflammatory and immune conditions like psoriasis, RA, IBS, etc. People see massive improvements from eating a diet mostly consisting of what you think are the worst things like vegetables, grains, and legumes. If these things were truly toxic and inflammatory, you would expect a diet consisting of *only* these things to cause more issues but that is not the case. I'd love to know your theory.

      He has said many times that improvements come from people stopping eating processed foods. When people stop eating chocolate bars, chips and hamburgers with Coke, of course they feel better. It's obvious. It's not rocket science.

      Paul actually was a vegan for almost a decade. It caused many problems for him and that is why he went carnivore. He was so strict carnivore that his electrolytes went bonkers. He was having cramps, dizziness, heart palpitations, etc. Therefore he switched to adding fruit and raw milk to his diet and his problems went away.
      As for his theory on why people on vegan diets feel great for the first few years is because they have eliminated the junk from their poor diet. However studies also show that 80% of vegans drop the diet after 3-5 years (if the chose the diet for health reasons and not moral) because of how they feel. Skinny-fat, loss of energy and muscle mass, skin issues, etc.
      I'm not advocating one diet or another, I just letting you know what Paul has said as I have followed him for years because his research is interesting. My sister is vegan and she loves it, I eat enough meat for 5 people and it has cured my gut issues. I eat no veggies, only meat, fruits, nuts, fat, and fish. My blood work is impeccable and I get it drawn every 6 months.

    Our food system is owned by three chemical companies. One by a tobacco company. One of our meat packers is owned by China. Our government is subsidizing corn and grains that makes those flours, oils and sugars almost free. Grains fatten . Grain oils fatten. Our GMO grains are bred to contain more phylates , oxalates . The processing takes away most of the nutrients in all of it. And everything is owned by those cooperations that only care about profit over people. Not to mention the church that hates meat eaters running the food guidelines

    This is great, we do really need to understand LA and ALA in its conversion rate to EPA DHA.. I kind of get the feeling that the meat based diet works since the conversion rate is so low if you have a high fat diet your getting plentiful supply.. vegans have to supplement EPA/DHA but I hypothesise that if we ingest too much meat (lack of fibre slow eliminate) too much sticky grains (compromises villli in small intestines) compromise absorption all our lives without periodic fasting we slow the conversion rate - much like insulin resistance
    We need vegans and carnis but both healthy ones and studies for observation

    Its difficult to prove when food ingredients are slowly contributing to illness . This is why food manufacturing needs proper regulation. Without proof that ingredients are safe , how can they be Added to what we are consuming on a daily basis ?.

    I don't eat seed oils, but do eat a lot of nuts and seeds. Nuts and seeds are linked to increased longevity. I also eat liberal amounts of olive oil which is also associated with increased longevity. (See studies below)
    I don't think Animal fat is good or bad per se. I think it's more likely neutral for many people. Though I don't recall ever seeing a study whereby animal fat reduced all cause mortality. With that said, I still eat some cheese, full fat yogurt, and eggs. daily .
    "Our findings suggest that nut consumption is associated with reduced all-cause and cause-specific mortality, with the strongest reduction for CHD mortality. Both tree nuts and peanuts may lower mortality and most of the survival benefits may be achieved at a relative low level of nut consumption."

    What about air frying? When I do this to frozen potatoes and raw chicken and a large portion of fat leaks out. When I eat these items, I hardly notices greasiness. I know there is still fats in these items when consumed and maybe heat breakdown products but it has to be significantly less.
    BTW. What about sauté shrimp or vegetables in extra virgin olive oil?

    Might be confusing: two oil acids with similar names; linoleic and linolenic acid. Organic canola oil can be good for health, but may turn rancid if heated. So: AVOID french fries and other foods COOKED in linoleic acid oil! Why? Because that kind of oil is unsaturated, and frying (in) it will change its structure.

    It isn't linoleic acid. Like with most things it's the context. Too much linoleic acid and/or overfried linoleic. Linoleic has health benefits if used with some common sense.

      Exactly. Ratio of Omega-6 to Omega-3 is important.
      Saladino and many others against seed oils get nearly zero Linoleic acid in their diets. It’s one of two essential fatty acids. They aren’t getting significant levels of the other one either.

    What’s your thoughts Paul on the data for seed oils not being inflammatory (at least the general inflammatory markers) Gil from Nutrition made simple does a great review of the data and it seems all of it points towards no inflammatory changes (ruclips.net/video/-xTaAHSFHUU/видео.html)
    He covers studies on high doses as well as eating food cooked in seed oil… overall it seems difficult to argue with the reproducibility of the data. Obviously more research is needed, and some of these studies admit such though given this, is it naive to be saying seed oils are tremendously pro inflammatory ?? (Id say that’s one of their most common descriptions online currently)

      Having a quick read of some of these studies it does not seem like they involve dietary changes but rather supplementing with an almost insignificant amount of seed oils like 1 tablespoon. That's likely not going to have a big effect on insulin resistant patients who are most likely consuming seed oils as their main source of fat like most of the human population. So basically a lot of studies are saying that 1 tablespoon of oil is not changing inflammation markers in test subjects who already have rampant inflammation. Seems like flaxseed can have a positive effect on these subjects because of the omega-3 content, that's understandable. I'll have a deeper look into the studies in time but unfortunately like most studies there is never any control group eating saturated fat.

They also cite evidence for the beneficial effects of PUFAs on the risk of CVD (11, 12).       There are more factors but seed oils are clearly the elephant in the room. Think about it, we went from consuming saturated fat as our main source of fat for the vast majority of our history with relatively low rates of type 2 diabetes, cancer and heart disease. We switch our main source of fat to LITERAL ENGINE LUBRICANT and rates of chronic inflammatory illnesses sky rocket. Sure correlation isn't causation but it seems pretty obvious to me that the main problem is the seed oils. It's even related to processed carbs too. No one is consuming carbs without fat because it's dry and unappetizing. I've eaten Dutch honey cake before which is purely carbs and no fat and it's horrible. People always consume fats with their carb source and what fat source is that? 9/10 times they're consuming seed oils with their carbs.

      @@thevomit5851 I'm not sure its as clear as you say. I agree we were eating higher amounts of saturated fats, but just how many carbs isn't entirely clear. Depending on location and community customs, some people surely ate more carbs than others, for example. I'll also give you that probably no one was consuming large amounts of seed oils. I disagree about no one consuming carbs without fat though--apples? Honey? vegetables? None of these are dry and unappetizing. Many people use butter with veggies and I don't think olive oil is the elephant in the room as the research looks pretty good for it.

    All the excess 'vitamin A' in the diet now. Look at the increase in A consumption over the past 50 years. Paul mention aldehydes, but ignores the fact that 'vitamin A' turns into an aldehyde in the body, retinaldehyde, and must be detoxified the same as other aldehydes we consume. Look up the work of Grant Genereux and Dr. Garret Smith. Judy Cho has done interviews with both of them.

      @@wocket42 No one is deficient in VitA. It's a plant toxin (carotenoids) that animals convert into what we call 'vitamin A', a toxic compound that messes up human biology. Vegans and vegetarians get a lot of it from plants. If you eat animals, stay away from organ meats. Dairy also has a lot.
