    I have made this twice in the last 2 weeks,what a delicious and decadent cheesecake.My husband,friends and family were so surprised to learn that it is a vegan raw cheesecake and liked it so much that we are having it as desert for Christmas.Thank you so much for sharing this lovely recipe.
    Just a question,on the video your coconut milk that you pour in seems very liquidy.Do I have to refrigerate it and scoop out the separated coconut or can I pour in the whole can?

    Amazing! Watching your food processor/blender is really satisfying to me, the outcome is so smooth and it seemingly purees the dates so easily. With my blender I always have little pieces leftover, even if I soak before and blend longer. Well worth the investment!

      Yes, Vitamix is pretty amazing. I assume you're using Medjool dates, but it's worth noting that some dates are softer than others. I have tried quite a few different brands of Medjool dates and there can be an enormous difference in how soft and juicy the dates are.

    Dear Petra,
    I had many difficulties with chocolate cheese cake...and I sure hope you could advice me in regards.
    1) I used Coconut cream from can, liquid and cream from 2 (400ml) cans. ( The end result was quite a lot of mixture, even for the 7" cake mold I had, some of the mixture was left in the fridge...)
    2. Also, as I cannot use sugar I used a keto mix of Erythritol, steviol and monk fruit ( the manufacturer claims it can be used like sugar in a 1:1 ratio, which I did but the mixture was super, extra sweet and difficult to eat.
    I believe I should have grind this sugar sub to avoid from grainy texture...
    So how much of this sweet should I use to you opinion?
    3. The cake was very hard to separate from the mold, ( specifically the cake seeds and dates base) in spite the fact that I put a baking paper at the bottom of it.
    4.
    I had to thaw the cake, as it became like a rock in the freezer, yet even when I used a hot water heated knife to cut the cake out of the mold the to cut a slice, part of the cake was thawed and part was still froze but it started to look like a masacre while I seriously struggled to slice it, twice this morning.
    It seemed that the coco butter did not make a good job keeping the cake nice, stable and firm enough when thawed, so it is impossible to cut while still frozen, or to keep the slices out of the freezer

    Will we have to consumenit like frozen or it will stay firmed even on room temperatures? Asking because we are not offering anything cold eatables to my 3yo daughter due to her frequent chest congestion.

      It doesn't need to be frozen, but it doesn't need to be stored in the refrigerator. The cake softens quite a bit at room temperature.

    do you not use here coconut sugar? 🤭 oh my can you believe i scooped it to a 1 measurement cup as you guys in us use and it was nearly over 100g yet the translation in recipe calls for 196 i’m so confused
    should i stick to grams as that’s what i used for the rest esp cocoa or use actual cup or sugar that’s like 120 max ?

    I was surprised to see that you used no salt in this recipe. Is that on purpose? I think salt would really enhance the crust and the filling. You wouldn't need much.

      Yes, I typically do use salt when making chocolate-based desserts. The written recipe does call for salt; I must have just forgotten when I was filming. Thank you for pointing that out :)

    Hmm 🤔 𝗡𝗼𝘁 Keto. 😧 I guess I could replace the coconut sugar with my Powdered Bocha Sweet. But then I would have to reduce the amount of that powdered sweetener. And those dates are pretty high carb as well.
