Instant Pot Pork Loin Roast

- Perfect your pork loin roast in your Instant Pot for a simple dinner any night of the week! Five ingredients, nice and easy.
INSTANT POT PORK LOIN
2 lb. Pork loin roast, boneless
Kosher salt, as needed
Black pepper, ground, as needed
1 t. Olive oil
1/2 C. Vegetable broth
1. For the Pork Loin: Season pork with salt and pepper
2. Set Instant Pot to Sauté. When setting reads HOT, add oil
3. Add pork and brown on all sides, about 2 minutes per side
4. Cancel Sauté setting
5. Add vegetable broth, close lid with the pressure vent closed and set Instant Pot to Meat/Stew. Let cook 20 minutes
6. Quick-release pressure and let pork rest five minutes in Instant Pot
7. Open lid, remove pork, set on cutting board, check for internal temperature of 145ºF and let rest for three minutes
8. For the Pan Sauce: Using remaining cooking liquid, set Instant Pot to Sauté and reduce by half
9. To serve: Thinly slice pork and spoon pan sauce over slices
Option: Add your favorite seasoning with the salt and pepper.

Thank you for a timely dinner recipe! We wound up with a freezer full of various cuts of pork, and I was happy to find several easy to follow Instant Pot recipes that will take the stress out of choosing and preparing the right cuts for several meals.
Pork loin is our absolute favorite. DD doesn't particularly like meat and hates beef roast. She loves pork loin roast. I just put loin in a pan then add some water. I then salt it and sprinkle tons of salt over the top.
Cook until meat is very tender. Water becomes thick enough to use as a sauce. Making this roast is as easy as pie. Serve with mashed potatoes Yum!

Only thing I saw wrong was releasing the pressure so soon.. the meat is expanded when hot.. release pressure too soon and it tightens up a tad... best to let pressure slowly come down.. atleast 5 mins...
On a small loin 20 mins is fine and if yer worried about doneness leave it sit in pot 3 - 5 mis after it beeps. Then do your quick release but it may be drier. Since she browns 1st this added to her 20 min cook time. 😊

@bite my vape I was wondering about this because a 2 lb pork roast recipe I saw earlier was 27 minutes but a 5 lb one I saw was about 36 min. This video shows 20 for two lbs. My thermometer broke so I'm nervous to mess up but my thawed approx 3lb roast needs to be cooked tonight!

Mine says...
Pork, loin roast: 20 minutes per pound.
Pork, butt roast: 15 minutes per pound.
Pork, ribs: 15 - 20 minutes.

Never did a pork ROAST in a pressure cooker before, always used the oven. Gives that caramely, toasted outside. Would def be willing to try this awesome recipe, but would be cooking it a bit longer. Not on the "pink pork" bandwagon that has cropped up over the years...
If it is 20 minutes per pound why is this cooked only 20 minutes? Should it not be 40?

Minutes per pound is mostly used for the oven. Not the case in a pressure cooker. If you did even 10 minutes per pound in a pressure cooker you would more than likely have mush that falls apart when you try to take it out. The pressure cooking process is several times faster than an oven.
