    I think I would not like Ming’s version of duck pho. I am not saying it’s bad, it’s just not for me. The broth was a bit odd with the coconut milk and without the star anise and other spices you expect. I guess the fennel provides that licorice flavor, but it’s raw. I just don’t know. And those sweet potato noodles? At first I thought he meant glass noodles made from sweet potato starch, but nope. I don’t like spiraled vegetables pretending to be noodles, but again that’s just my personal preference. I’ll stick with my regular broth and chicken pho.
    The first recipe, the duck with plum sauce, looked great. I think I could recreate the dish at home with some simplification. It’s always interesting to see how professional chefs reimagine old dishes into something new.

    Delicious, but.....Shaun. Why would you serve this in a bowl? It would look much better on a plate.
