Two culinary gods in one place. I use Bayless's recipes for a lot of my Mexican food when I first started cooking

I don’t think I’d like the moo shu they made, but that doesn’t mean it’s not a great dish, it just means it’s not for me. I prefer more vegetables and less protein, and I like the traditional, small, thin and steamed pancakes more than the thick crispy version used here. I like the crunch to come from the vegetables, not the wrapper. Everyone has their own preferences and that’s okay!
I wish you could buy the pancakes in more stores. My local Asian megastore doesn’t have them, so I’ve made them, and it’s a lot of work. I guess I’m lazy.

By Mexican law and international standards, all tequila is made from 100% agave and comes from the state of Jalisco. Otherwise, it is called mezcal. And sometimes mezcal is better. I had some once that came in a hand-painted bottle that was like a new drug. And maybe it was.

Recommend a carbon steel wok instead. Easy to season and develop a blackened, non-stick coating.
