    They were excellent. Second time I made them I fried 6 strips of bacon first, and used the fat from that to fry the onions and potatoes, then added the crumbled bacon back in at the last minute, and put some shredded cheddar cheese on top. It was the best camping food ever.

    Hey, my mom used to make these every Saturday morning too. Only difference is she added bell pepper in with the onion.

    I bet my grandma would have loved this. She put sugar on everything from popcorn to spaghetti. She lived to a ripe old age of 99.

      My mother added apinch if sugar to most all of her food also but I have to say I never saw her put sugar in the potatoes. Spaghetti yes , Beans yes I will definitely give it a try.

      I didn't read any comments of hate on the sugar, some people never heard of using sugar on pan fried potatoes. However, I am dead st against calling anyone a fool just because they have a different way of doing things. Some people check out these recipes because they want to try recipes that are new to them. Chill🤔

    TIP: Before boiling your potatoes, slice the peel around the perimeter of the potato, not too deep. After the potatoes are boiled and cooled enough to handle the peel just slides right off. No scraping! :)

    I just wanted to give you a shout out and say that the way you cook was exactly the way I was taught since I was 7. My parents didn’t believe in wasting anything and that it was really cool when you talked about using left over grease from other meals, and that will definitely enhance the flavor (I myself always save bacon grease as it can almost be used in anything).
    I went to culinary school in my 40s and was continuously being yelled at and harassed by my instructors using the methods that I was taught while growing up but what the food snobs that cook for the rich continuously forget is that the majority of people that go out want something that tastes like what momma used to cook instead of some upscale foolery. Excellent recipe and cooking instructions…thank you for your time, and God bless.

    I made these for dinner tonight and they were bangin and didn't take long at all. I cooked mine in Coconut Oil instead and paired them with some egg whites and had breakfast for dinner. I definitely subscribed not only for your cooking skills but for your accent! Keep up the great work, Jay!

    My mother in law made these and I fell in loveeee , like I could eat these all day just by themselves. I’ve always made home fries but could never really get them soft 🤦🏽‍♀️ but she made them one day and mixed it with eggs omg it was delightful 😋 .

    I can honestly say I have never seen fried potatoes made this way before. Typically in the south we just peel the potato, and onion if using, and cook in cast iron with bacon grease. If you put a lid on them they steam and eliminates the need to par boil. Haven't seen the use of sugar before either. I do however use season salt or I will use Tony's Creole seasoning. The potatoes get crispy and they don't fall apart but keep their shape. BUT, since I do enjoy trying new things I will give this a try. I won't deny I am skeptical though. But hard to refute the claim of being the best if you don't try them! ;)

      My Norwegian Mom did them this way too but instead of bacon grease lard was used:) As a kid the best part was getting to peel the bottom layer off the pan at the end of the meal! Yum!

      Ruthann Mink I do the same ! I use bacon grease and salt and pepper I’m from the South but gonna try this right now ... I didn’t do the boiling potatoes . I like it pretty and crisp

      Yes..bacon drippings or lard. Cast iron skillet Tony's creole seasoning toward the end of cooking finish with butter cover to get crispy..when par boiled lose the starch therefore the shape. The sugar used depends on the potatoes browning if needing and the taste of the potatoes the twang lol taste.

    Wow! Although I skipped boiling and just pealed and large chopped my potatoes, I seasoned them exactly your way and slow cooked them till they were nice and crispy Brown on the outside and soft and succulent on the inside. The addition of sugar is ON POINT! What great flavor! Thank you for sharing this video!

    While potatoes are boiling, place cast iron skillet in 375 oven w/oil to get a crispy jump start on frying so they don't mush up. 😊

    Them fried pahtaytuhhs look so good!
    My grandmother fried hers straight up, no pre-boil but she must've added sugar too because it would have a nice "caramelize" taste on the edges. Had that with grits, salmon balls (croquettes) and some crispy bacon......Damn!

    All of you folks hating on the sugar in this recipe are fools! Sugar helps to caramelize the dish. It's not going to add any flavor, just make them cook up better (prettier). You can skip it, but you're really short-changing yourself and those you're feeding. Parboiling the potatoes helps them cook more evenly, as well as faster. Cooking them without boiling first is absolutely possible, but gives a different texture, and cook time. Thank you Jay! I appreciate all your videos. I come to your channels when I'm having trouble deciding what to feed my family. I just need to remember to come a day in advance! Your prep time is on point! Much love!

      A bit of sugar enhances the flavor. It basically does what MSG does. You don't add enough to make the dish sweet. It is a traditional technique of old southern cooks. You can certainly omit it, but your flavor will not be as intense.

    I made these today. Mother’s Day 2020. Awesome. Awesome. Awesome. The only thing I did different was season the potatoes one one side before I put them in the pan. After in the pan I seasoned the other side for consistency.. seasoning was on point bro!! Delicious!!! Thanks for this. Stay safe/healthy!

    Your the best. My favorite chef, besides my great grandmother which passed away at 103. My mom unfortunately cleared the house out with that being said she threw away recipes.     been cooking cubed raw potatoes for like 40 years now..They take a while to cook but end up crisp on the outside and soft through. Never used sugar but I like the idea and will try next time.Your style looks like a winner.

    They look delicious. My grandpa used to make a dish (which my mom carried on) where he pan fried pork chops, potatoes and onions all together. I like making a breakfast scramble with scrambled eggs, sausage crumbles, fried potatoes all together in a pan and top it with shredded cheese (any kind you prefer).

    This is soooooo good and the sugar helps to caramelizar everything. Everything came out great. I made it for dinner with some steamed spinach and it was great (vegetarian). I couldn’t wait until breakfast.

    Wowowow.. i can't wait to try this.. ive never added sugar and this looks amazing!! My gramma added sugar to her fried Green tomatoes when she fried them and it made a huge difference Thanks so much for sharing..

      You can slice your onions and boil your potatoes the night before.
