    My delicious homemade Ají: • Delicioso Ají de tomat...
    GUATITA
    INGREDIENTS:
    1lb of cow tripe
    1/2lb flour
    10 limes (to wash the tripe)
    1 red onion
    2 stalks of green onion
    1 tomato
    1 green bell pepper
    3 garlic cloves
    3 cilantro stems (to cook)
    1 handful of cilantro (to plate)
    ½ lb of peanut paste (or peanut butter)
    1 cup of milk
    Salt to taste
    ½ teaspoon of pepper
    1 spoon of annatto paste
    1 dash of oil
    Sides:
    Rice
    Fried ride plantain
    Avocado
    Lime
    Homemade Ají
    RECIPE:
    Chop the cow tripe to a medium dice size.
    Wash the tripe with plenty flour then with lemon juice, repeat this process twice. Cook it with plenty of water on high heat for 30 minutes so it softens.
    Once the tripe is soft, in another pot add a dash of oil and the annatto paste. Make a refrito adding all the vegetables diced in small cubes, the red onion, tomato, green pepper, garlic and green onion.
    Once the refrito is done add the tripe, cover with water, cook it on high heat keeping an eye it doesn’t stick to the pot. While the tripe is cooking dice the potatoes small to medium size.
    Let’s make a refrito for the peanut sauce. Just thinly slice some green onion and cilantro, sautee it with oil and annatto. Mix with the peanut paste previously blended with milk.
    Once the tripe is tender add the peanut sauce, and the potatoes, boil until the potato is fully cooked. Taste to check the salt
    To plate add the chopped cilantro
    Serve with Rice, fried ripe plantain, avocado or our delicious homemade Ají.
