- Part 2 shows the 2 step process of adding Salt in the salmon roe and curing it, salting it, to make delicious salmon caviar, or Ikura. This method just uses the Salt directly. There are other ways, such as using brine, or soysauce. The entire process takes about 90 min.
I used your video to make my first salmon caviar. It turned out delicious ! I did use a little less salt than you did. Thanks for posting this.
Nice explanation for those of us who haven't seen or tried any thing like this. I have recently become curious after buying tiny eggs on my take out sushi. Your video gave a good look at the size of the eggs and made me really want to try some.
Hey folks, NEVER use cold water for making caviar (IKRA), because as the eggs touch the cold water they become so hard like ping-pong balls (not tender), use warm or hot (not boiling) water only. Also make salty brine (1 liter of hot water (165"F) and at least 3 table spoons of Kosher (coarse) salt. In brine you can easily adjust the salt content. Hold the eggs in brine 10 min. then dry it with strainer and paper towel. After that put caviar in glass jar and add a little vegetable oil (but not an olive). That's it, you can enjoy the caviar for 4-5 month. Yummy!!! :)
Spasibo. Excellent tip. Thank you!
Why no olive oil?
What to do if the eggs went white? :/
@@kanger80too strong of flavor. You can use a neutral flavor oil tho.

Awesome tutorial. I've made roe before, but this will make the process much easier
I just made this with steelhead eggs hopefully gonna do the same with salmon eggs in a couple of months
Just so you know, you can freeze the caviar for up to a year :) Just make sure to keep it deep in the freezer, not on the freezer door :)
How do you go about dethawing? Just in the fridge then eat?
@@Kylebugly4 yes, leave in the fridge until thawed.
Its playing twice but thank you for the knowledge
Did he pick that spoon out of that sink? Yes he did! His sink is probably cleaner than yours you Germaphobe. And they cure un-refrigerated meat in salt. Salt kills bad bacteria.
Ok now I know what to make with all my salmon eggs/roe. I have caught about 30 King/Coho salmon this season and I usually use the eggs for crab bait so after seeing your vid. I'm going to try your method thanks !
BAIT?!?! 😭 BLASPHEMY! 😭 What is WRONG with you?!?! Salmon roe is one of the most delicious foods on Earth!!!!
Is it true that caviar makes the hot water white?
Very nice good channel my friend 😮😮😮😮😮😮
yum thanks for sharing
Thanks for sharing, so good.
great video
which salt is used iodized non-iodized ?
Did he really just pick the spoon up out of the sink and use it again?
Honestly I was thinking the same thing. So gross... sinks are so dirty
Can you please explain what long time means?
salt is the cure if your roe turns opaque when you are rinsing it.
Only wood spoons because metal spoon will give it a metal taste
I used Kosher salt and it turns out very good
TMSpencer999 how do you get the beginning fish? Or what do you say at the counter? Lol
Just a quick question. Just made this. How long will it last in the fridge? I made a good amount from 2 nice salmon
This is good!!
how mature are the eggs cause i catch about 100 + salmon every year and i would like to try this but the eggs are not that big and the color is diff
Got to get the eggs later in the run
Need to catch them while they're in the river.
This isn't a big deal. It's all covered in salty water as he states. Water mixed with table salt. Table salt is iodized. Iodine is a disinfectant. Good thing you picked up on this. Step Yo Game Up
'All said in good fun'
Does this work with human roe?
Nah it's salty already
Yum 😋
6:51 till the end is the salting stage. i am gonna try this
you cannot use a stainless steel spoon or anything stainless steel for caviar
+tanayem zaman Who told you that?
SneakyNinja1220 but he's making it into caviar tho?
Ummm idk if you know but your not suppose to use a silver spoon
Did you use table salt?
I always thought pickling or Kosher salt should be used.
You can also use sea salt, anything that doesn't contain iodine.
why wouldn't he? It wasn't used for anything else except the caviar and the sink is clean. No need to waste dishes.
big cool
He just pick the spoon up from the sink and put right back to the eggs.
Using a metal soon but why?
waste o money. use sea salt. kosher is cheap and usually sea salt derivitive. pickling salt is just a waste and not as healthy as sea salt.
salty ? :P
i am an environmental health student and it is the first thing that i realize too.
i was wondering if u would be interested in shipping some of this to me full prepped for fishing purposes thankyou
I thought it was black 😕
Hbp ppl......
Thank you for sharing
i dunno my bathrooms gross as fuck, but id cook dinner in my mothers. maybe his sink is clean as fuck. mine isnt. i wouldnt do that without a courtesy rinse or if i know ive put shady shit in the sink, like raw meat aside from fish, i wouldnt dare.
nice grammar. NOT!
