Strat using stainer from the begning it will save you water and time, coz smale pices of membrain drain out with the water through the holes while you were seprating the roe from the sack.
you have part I and part II videos but I think that's all about rinsing and rinsing untill clean, remove from the membran, clean them, salt them, throw them in the fridge. Maybe for the next video you could make an effective one..

definition of roe is marine animal eggs, definition of caviar is marine eggs from a black sea animal. ? or did you not know the difference between roe and caviar? you are making edible salmon roe, not caviar, if you sold this as caviar you would be lying to customer. the only two are beluga and sturgeon, this is only two real caviar in world i know of. all the others are just called roe.even after you treat it and salt it, it is still just roe. plus you are cooking the eggs with hot water always wash the egg sacks with cold water to avoid accidental cooking. this takes the flavor out.

Got a salmon from a friend of mine here in Iceland and it was full of roe, used your method for the caviar. Very nice thank you 😉

Buy a fishing license if you want to get it as fresh as you can.
