@@HardRockMiner I dont feel like a failure because there was no way to catch salmon in CA, unless I were to poach. Salmon was shut down in 2023 and looks like it will be shut down again this year.

same reason people say not to serve caviar with metal. Wood, or abalone if you're fancy, will not impart flavor onto the eggs

You should be using a glass container when curing with salt. Using a metal one is a no-no..😮

The ocean or a river...its not sold anywhere so unless you know a fisherman you need to catch it yourself like the guy in this video did

salt is what does the curing. people don't normally add wasabi, that's just his personal touch. Many Japanese people use soy sauce and dashi
