Me and my mom are new fans of your channel! Made this yesterday and it turned out so great! Your recipe and video was so easy to follow. The meringue part took some time for me (20-25 mins!) So anyone making this, do not get discouraged. I thought i messed up but the egg white mixture just needs to be mixed on high for a while til you get stiff peaks! I cant wait to make them again!

Hi Kurt, I've tested the ube mamon recipe, you're right it's "masarap". I baked it in my cupcake pan. It shrink a little maybe because my batter is a little bit watery. I used 4 L eggs. Thank you😍

I tried this already and I love the texture and the taste. I love it more that there is no caramelization at the top. This is the result I have been expecting in my mind. The mamon didn’t come off easily from the molds after five minutes of cooling them down so I used a blunt knife to solve my problem. Thank you very much for sharing this recipe. I do this again and I will try Wilton Cake Release.

Napakasarap talaga napakalbot at a bit sticky due to the ube halaya.Inspired ako at gumawa ako ng ube custard for the topping then I added grated cheese on top of the mamon. Kurt, I noticed your mamon maintained its shape while cooling while mine seems to deflate /pucker a bit in the middle or on the sides. How to avoid this?
Hi Ellen - the chiffon shrinking, deflating or cracking could be a sign that egg whites are not stable / were not beaten properly. Here are a couple of things to keep in mind when making the meringue.
1.) The egg whites should be separated very well - with no traces of egg yolk in it. As traces of egg yolks could prevent it from whipping up (it's easier to separate them while the eggs are still cold).
2.) Try to use newer eggs, as they whip up better. And let the separated egg whites sit at room temperature for at least 30 minutes to 1 hour, so that they come to room temperature. Egg whites whip better when they are at room temperature.
3.) Make sure the mixing bowl and beaters are completely dry, with no oily residue. Using a glass or metal bowl for whipping helps, as plastic mixing bowls often can have oily residue in them, which prevents egg whites from whipping properly.
4.) Cream of tartar helps to stabilize the egg whites, so that they whip up and gain volume. If cream of tartar is not available, you can substitute 1 tsp of cream of tartar with 2 tsp of lemon juice, or 1 tsp of white vinegar.
5.) Add the granulated sugar into the egg whites very slowly, as quickly pouring in the sugar too quickly could deflate the whipped up egg whites.

Hi po.. can i do this without the halaya and just make do with the ube extract? Do i need to add another tsp. of extract as a halaya substitute or more? Thank you in advance..
if ube halaya is not available, you can leave it out and just rely on the ube extract for the ube flavor in the cake - the majority of the ube flavor in this cake comes from the concentrated ube flavor in the ube extract (no need to add additional ube extract).
Ube powder can be used as a substitute for ube halaya if ube halaya is not available - by reconstituting the ube powder in hot water (per packet instructions) making a paste, and adding 1/4 a cup of that paste to the wet ingredients just like the ube halaya. Hope this helps! :)

Gel paste achieves a brighter and more vibrant purple color that liquid or powder. I find that the ube halaya + ube extract is usually not enough to make it bright purple. Hope this helps! :)

Hi, if we use cupcake liners will it stick to the liners after baking or will it be hard to remove? Also, I cannot find the ube paste . Can I just use the ube flavoring and if I should add more since I don't have the paste?

My food coloring is that of gel like. Is the measurement for food coloring still 1/2 tsp for gel food coloring? Thx.

Hi i have tried the recipe 2 times followed exactly step by step they were delicious but 2x in a row the mamons were stuck onto the mould any suggestions would be appreciated …. they ere stuck at the sides they did not pull in like yours
Hi Amber - sorry to hear that your mamons get stuck to the sides of the mold. You can try either greasing the sides of your molds, or using cupcake liners instead of metal molds. Hope this helps! :)
If u use cupcake liner do u need to put parchment paper?
Cupcake liners are already nonstick so no need for parchment paper

Keep in mind that ube halaya from a jar comes sweetened. So may have to add extra sugar to the batter, depending on the level of sweetness you prefer.

Hi Irene - if ube extract is not available, you can either leave it out (will not affect cake's texture). Or substitute using vanilla extract. The cake won't have as strong an ube flavor since most of the ube flavor comes from the ube extract. But it will still be a delicious, light chiffon cake, with a subtle ube flavor from the ube halaya.
Unfortunately, in my experience, ube extract is the only thing that creates that strong ube flavor, without affecting the light and delicate texture of a chiffon cake. Adding too much ube halaya would make the cake very dense and heavy.
