    Cashew Meringue:
    2.5 cups toasted cashews [375 g] - amzn.to/4c0aA2c
    1 cup powdered sugar [120 g] - amzn.to/3U0orQx
    10 large egg whites (room temperature) [300 g]
    1 tsp cream of tartar (optional) [3.4 g] - amzn.to/3KD4utj
    1 cup granulated sugar [200 g] - amzn.to/48VsDFh
    French Buttercream:
    10 egg yolks (large eggs), room temperature [200 g]
    1 cup granulated sugar [200 g] - amzn.to/48VsDFh
    6 tbsp water [89 mL]
    2 cups (4 sticks) unsalted butter, room temperature [454 g]
    2 tsp vanilla extract [10 mL] - amzn.to/3HflEvn
    1/4 teaspoon salt [1.5 g] - amzn.to/3O5bvoS
    2 tbsp dark rum (optional) [30 mL]
    Garnish:
    1/2 cup toasted cashews [75 g] - amzn.to/4c0aA2c
    NOTE: For dry and crispy cashew meringue wafers (rather than the soft and moist wafers in the video), bake the meringue wafers at 225 degrees Fahrenheit (105 degrees Celsius) for 6 hours instead. The lower temperature over a long baking time will remove all the moisture from the egg whites creating a hollow and crispy texture, without burning the outer layers of the meringue.

    I cannot wait to try this! My sister made one based on the Goldilocks recipe and it was OK. The last two times I have been to the Philippines we got Sans Rival from Betty’s. It was on another level entirely. I don’t know what they do differently because it looks like a basic Sans Rival in a kind of ugly box. But it was truly the best one we have had and believe me, we tried it at every known place in Manila and Quezon City! I actually emailed them and begged for the recipe, but no dice. Maybe you guys, since you are legit RUclips chefs, could figure out what Betty’s does that elevates their Sans Rival! In the meantime, I will make this recipe! Super Salamat!

    I just did this last Friday with a friend and served it together with Kurt’s Ube chiffon cake to celebrate 3 friend’s bdays! I also added my own orange chiffon cake! It was delicious as always!     This couple is very inspiring! I love watching them bake! I tried this recipe several times but for the life of me, I can’t get my meringue to be thick enough! I am gonna try and try until I perfect it! Not a very cheap hobby though hahahaha thank you Kurt and Donald!

      Below are more tips for making the meringue:
      1.) The egg whites should be separated very well - with no traces of egg yolk in it. As traces of egg yolks could prevent it from whipping up (it's easier to separate them while the eggs are still cold).
      2.) Try to use newer eggs, as they whip up better. And let the separated egg whites sit at room temperature for at least 30 minutes to 1 hour, so that they come to room temperature. Egg whites whip better when they are at room temperature.
      3.) Make sure the mixing bowl and beaters are completely dry, with no oily residue. Using a glass or metal bowl for whipping helps, as plastic mixing bowls often can have oily residue in them, which prevents egg whites from whipping properly.
      4.) Cream of tartar helps to stabilize the egg whites, so that they whip up and gain volume. If cream of tartar is not available, you can substitute 1 tsp of cream of tartar with 2 tsp of lemon juice, or 1 tsp of white vinegar.
      5.) Add the granulated sugar into the egg whites very slowly, as quickly pouring in the sugar too quickly could deflate the whipped up egg whites.

    Incredible! Very interesting, indeed. I did not realize that I can possibly make my own Red Ribbon Sans Rival - Cooking with Kurt style.     A good friend is Filipino, so I trying to make this in her honor. But I just have to tell you that I adore watching this video. I wish you lived in La Crosse so that we could all be friends!
