I tried making it just now, the butter is just too much and so I only used a bit and added thickened cream...high in fat pa rin! I'll try to substitute it with cream cheese next time. I think cream cheese is more delish and not so fatty compared to butter (?)

To replace rum in cocktails or cooking, try brandy, bourbon, or cognac. Each has a similar flavor profile and won't be out of place in most uses. For a non-alcoholic replacement, use rum extract or molasses combined with a little juice and almond extract.

Helo po chef.. i tried po at home.. ni ref ko muna ang crispy bake meringue.. after a while po nanlambot sila.. pero kahit kanun i continued layering it with butter.. order po kasi un kaya hindi ko natikman.. pero binalik ko po sa ref overnight.. babalik po ba yun sa pgka crispy? Thankyu
I failed sa merengue. I’m using conventional oven. I placed it in the oven, and checked it after 30 mins, it’s already burnt. So i turned off the gas andjust let it sit there for two hours. Buttercream taste so elegant. I’ll try my luck on the merengue again. Maybe I’ll pre heat the oven at 100c. Good thing it doesn’t cost that much, unlike the buttercream. But still, definitely cost so much cheaper rather than buying from the bakeshop! Cheers!
