We eat a lot of green banana in Puerto Rico. Best way to peel these banana is to cut both ends, slice the skin length wise both sides and let it set in hot water. It well come off easy and stop it from turning brown. We do use the skin as well for stock.

Omg this is what we call in Hawai'i poi mai'a. Its pretty much prepared the same way. Usually we also do this taro(cocoyam) and breadfruit. It's the stable of our diet!

My Husband is Sāmoan, and they eat green banana boiled in coconut milk/cream flavored with onion. It's so good with goat light soup and shito!!

Do you know what might have happened with my attempt at this recipe? I could not get this to turn into a ball. I stirred it for over an hour on the heat. It thickened but never turned doughy. The only difference in what I did was I used bananas from my back yard. The were certainly green still. In order to peel them, I had to boil them for a little while.

Oops. I used a different method by peeling the green Bananas, blending them and cooking it through which differs from the method you used 😘
