@@trvman1You don’t need the expensive rib eye for an authentic Philly style cheesesteak. Most cheesesteaks in Philly are made with the cheaper cuts like eye round, top round, etc….in my opinion it actually has a stronger beefier flavor than ribeye. I’ve done A/B comparisons of ribeye and cheaper meats and have found that the cheaper cuts actually taste better in the category of sandwiches
Nice sandwich you made here. 1 mistake. In philly, we almost never toast our cheesesteak rolls. A Philly cheesesteak should have a soft bite with the cheese melting into the soft bread. One reason we don't toast the bread, is because the bread is the co-star of a real philly cheesesteak (next to the ribeye). Good cheesesteak rolls are not just hoagie rolls available anywhere. Amaroso brand rolls are good mass produced rolls for a cheesesteak. But many of the best cheesesteak joints in philly either source from local area bakeries or bake their own.
DELCO here, you nailed it. What the guy did was really nice, but your roll opinion was spot on. Not sure that Wolves Guy know much of anything with respect to s cheesesteak.

I made cheesesteaks in Philly back in my youth. I agree, more cheese - using white soft slice is good. Keep the toppings separate until filling the order (ie. do not cook the meat with the onions and neither cook the meat where the onions were cooked).
