Ingredients:
1 (16-ounce) Certified Angus Beef ® ribeye steak
LE CREUSET cast iron signature skillet
1 teaspoon peanut or canola oil
1/2 teaspoon coarse kosher salt
1/4 teaspoon freshly cracked black pepper
3-4 thyme sprigs
2 garlic cloves, partially crushed
2 tablespoons butter
Note: This technique creates a great mouth-watering charred steak using a very hot skillet while emitting a great deal of smoke. Be prepared with pot holders and proper ventilation.

@@lashandaanderson9021 Anything by Lodge is good. Just make sure you season it well. Look up videos on how to season a cast iron pan. It's very important.

I tried this out and I realized really quickly on my first steak that the pan must be super hot and the meat surface must be patted dry thoroughly to get that nice even dark brown. Second one turned out amazing after making these adjustments.

Dry brine it too by salting it after pat drying and letting it rest at least 20 min at room temp
Yeah I've tried rubbing oil on the steak before and it doesn't need it. In fact it doesn't turn out right.

I like to squeeze fresh lime juice on mine at the end. The citrus plays really nicely with the salty, savory, buttery flavors.
Just used this recipe on two huge ribeyes 1-1/2” thick. Turned out great.

Watched this Vid, went a bought a Certified Angus Beef brand Ribeye steak, pan seared in my All-Clad stainless Steel pan with Rosemary & Thyme, while resting steak made an awesome pan sauce, Red Wine and Balsamic Vinegar reduction with beef demi-glace, shallots, roasted garlic, and Dijon country mustard. Cast iron cooking gives you more flavor. I use a 70 yr old cast iron skillet

I've been using this technique for almost a year. A perfect medium rare every time. My wife raves. I've used it for ribeyes and strip steaks modifying it slightly for thickness. Delicious!
I've done my steaks in Grandma's old cast iron pan for years!! Comes out great (most of the time!!) I haven't tried the preheat in the oven, just on the stove top, but next time I'll do it like you. Thanks for the great tips!! Happy Eating!!
Just did this as it was too rainy to BBQ. Best steak that I've done ever! My wife commented on how tender and moist it was. Once I had the steak resting I used the pan to quickly sauté some white onion as a side. Fantastic recipe!👌 Subscribed.

I pan-fry all of my steaks! I like to sautee some mushrooms on the side while I'm waiting for the steak to rest. It's a great combo! Another of my favorite sides is to cut the florettes off of about 1/2 head of cauliflower or a couple of good sized bunches of broccoli, put them in an appropriate-sized covered bowl with about a 1/4 cup of water and steam them in the microwave for about 5 mins. They come out great without all the nutrients cooked out of them. Finish with some butter, salt and pepper and you're good to go...
Try cooking with a little red cooking wine and sauté onions because it really
brings out the good taste.
Me and my husband love steak. He grills them in the summer and in the winter when it's too cold to hang out outside, I cook them on the stove. Yum!
I did this today with CAST iron on the BBQ, FANTASTICo!!! , just close the lid for the oven effect!!! light one half of the burners =) otherwise exactly the same way he did and it turned out AMAZING!! Best steak I have ever tasted! thank you! oh and it didn't hurt that it was a dry aged 28 days! mamamia yowza!
I compared this method with the cast iron/butter etc vs a plain grilled steak over charcoal and preferred the cast iron by far.

Instead of charcoal use firewood(mesquite,pecan wood) … and maybe pre heat cast iron

I recently purchased a cast iron skillet and will use my camp stove outside so as NOT to smoke up the house, not to mention the splatter! REALLY looking forward to cooking up a fine steak!
I just did this recipe with an inch and a half thick ribeye. The only difference is I did not bake in the oven. And I topped it with blue cheese. This was mouthwatering steak. The only way to cook it!👍 absolutely delicious😋
just finished eating my stake... I did exactly as you did and... wow! just wow! I have finally found the perfect way for me to cook a stake after I have tried dozens of ways that just didn't work. the only thing I have changed is that I kept the stake for 10 minutes inside the oven instead of 6-7. if anyone is reading my comment, do your self a favor and don't skip any step and don't substitute any of the ingredients, you will not regret it.

I used your method. The only issue I had was I asked the butcher to cut me 3 bone in rib eyes, 1-1/2” thick. He gave them to me already rapped up. They felt very heavy. When I got home and opened them, they were 2-1/4” thick. So, I had to leave it in the oven for 11 minutes to get the 130 degrees and I used Kosmos Q Cow Cover HOT BBQ Rub and at the end under low heat the thyme, rosemary and 3 garlic cloves, lots of butter. Also, I’ve never preheated my cast iron in the oven, again a perfect idea. Absolutely delicious!! Thanks

So 2-3 minutes, flip for 2-3 more minutes, then in the oven for 6-7 minutes on 450 F then back on stove at low heat while u do the butter garlic stuff?
No, 2nd side is not seared in pan. It's done in over during 6-7 minutes.

I just did this today with a 75.00 dry aged ribeye 2inchthick from my butcher , that ish came out so good. My wife was impressed.
I have used this recipe in the past with ribeye steaks. Had a t-bone today and used the recipe in the exact same way and it was also excellent! This is my go to for steaks. Don't even bother with the grill anymore for them.
I’ve done this since I don’t have a bbq. This steak as came out almost perfect every time. The crust is a littler harder on my electric stove top. I’d do more of the three minutes then the 2.
I've been experimenting on how to make steak for my wife and I, as it's her favorite food. Using this method, it came out AMAZING. Thank you from my wife and I!

The only difference as my pan was hot enough, I turned the gas off and added the butter and garlic then.
Looks great! I use flavored butter and one of my friends began drooling! I also throw some minced garlic on it while it is resting, then wipe it off for the slicing and presentation.
Oh sweet sweetness. My girlfriend is a vegetarian but finally gave me the green light to cook a steak in our home for the first time since we moved in -- I've been watching this video to tide me over the last 7 months, and god did it pay off last night. The steak was UNREAL. I used rosemary instead of thyme and I don't regret it. Golly am I sated; here's to another half a year until I get to experience this level of pure steak bliss again.

Tried this technique, but had to improvise with a cast iron griddle. A bit cumbersome, but much better than how I’ve made in the past. Next up getting a proper pan. Cheers
I always get ribeyes 1.5 inches thick. Did one the other day in cast iron as steak au poivre. Similar to your method but on a rack in the oven. Used the browned fond in the pan to make the creamy pepper sauce. So delicious!

i'm happy you talked about the heat level because so many videos just say "sear" lol. Took me a while to realize it shouldn't be on 8 high heat the whole time, might save some other people's steaks.

After searing the outside on both sides you put the skillet back in the oven for 5-7 minutes, at that point is the oven still on at 450F or is the oven off and the steak cooks from the residual heat left in the skillet from the oven top?

lol cooked my first 2" ribeye today on a stainless steel pan, set off my smoke alarm, didnt know about the oven, delicious crust, absolutely raw in the middle (albeit hot), ate it all like i was a shipwreck survivor. thanks for the tips :D

This is the best! I like my meat more on the rare side so I took off a minute in the oven. Didn’t have any garlic so just used butter. The meat was so tender and juicy. Didn’t even need steak sauce. I’m having leftovers for lunch. Yum!

Thanks. I tried this tonight and our steaks were amazing (just salt and pepper for seasoning) after marinating in Worcestershire overnight. I also used a cast iron skillet, however, putting it into the oven does the trick. Meat was soooo tender.

Great job, chef. I did about a 2 lb ribeye (think tomahawk but no bone) about 2" thick today. Salt, pepper, garlic ONLY. I smoke it on Traeger until it hits about 129-130 degrees. You can finish over cast iron inside if you like but today I had a nuclear hot charcoal grill standing by to crust the outside and the fat ring....only about 2 mins total. Ridiculous, would be proud to cook that for you....

Cast iron is the best way to cook any steak, because of getting a great sear to start. Very important start to any steak. Having the pan smoking hot is the key. Oil the steak, then season with seasoning salt, fresh ground pepper, herb and garlic and Cajun spice. Absolutly delicious.
I do all the same but I like to put a little sear on the sides, specially the side with the fat and help soften it a bit. Looks delicious, great video.
Due to this pandemic going on, I've had a bit of free time and decided to try some new ways of cooking. This way of cooking steak is amazing! I cooked some steaks up pretty much the same way and loved it! I like mine rare to medium rare. Definitely going to be cooking steaks again soon!!

i do 4 to 4 1/2 mins each side on cast iron no need for oven, nice and red inside and crust outside. perfect steak.
I salt and season it the day before and eliminate the oil. Then I follow your instructions for a perfect steak, though I use an internal temperature probe and remove steak from the oven when it reads 132 F, then baste with the butter, garlic and thyme.
this inspired me to try this again (after failed experiences in the past) and wow, they turned our perfectly! this also works for doing 2 steaks at a time.

I actually buy my prime rib as a roast, season with salt and pepper and smoke it to109 deg then cool and wrap with plastic and place in the fridge. The next day I cut the steaks and pan fry using the same technique. I now have a smoked pan fried prime rib and its very good.
I like to do mine seared in cast iron on a charcoal grill. I set the pan right on the coals to get it to 450+ degrees, sear the steak with lots of butter and finish it on the grill rack.

The best way to cook steak. Every time I cook it like this, it comes out perfect. You just have to be careful because after you get it out of the oven, the temperature really goes up rapidly
