Andrew Zimmern Cooks: Grilled Shrimp

  • When it comes to grilling shrimp, bigger is always better. Jumbo shrimp take more time to cook through, allowing them to stay in contact with the heat long enough to develop a char. For the juiciest shrimp, grill them with the shell on. The shell imparts a distinct flavor to the shrimp and acts as a heat buffer, helping to prevent them from overcooking. Here, I've made two different seasonings for the shrimp, one with thyme, rosemary and jerk spice, the other a classic garlic and herb mix.

    Hay Andrew! It’s been many years since we have seen each other. I worked At Cossetta Eventi in the Customer Service area. It’s great to see you are still cooking and enjoying life! Cele

    The last time I saw Andrew Zimmern was years ago when he was still on Bizzare Foods. I prefer this more mellow youtube version of him to the more animated travel channel version lol.

    Andrew - I know you would be flamed if you went any farther than head fat, eggs, and tomalley... But I am perfectly willing to take the flack. We eat the whole thing.... removing the rough parts from the mouth as we go. Unbelievably fantastic flavor. The uninitiated should start by at least trying the legs and leg('s) body meat, and biting off the tip of the head... crunchy and delicious. We made a similar recipe last week and it was a little to much for one dinner - we saved some of the tails for later but we ate all of the rest -- best part.
    .....Keep up the great work.

      Absolutely, its the way to go, seems a bit daunting at 1st but if cooked right the shell just became a light and very extra flavoursome crunch.
      Once tried you won't go back.

      When I deep fry unbreaded whole shrimp I eat everything, the head and shell and all and I love it, but on the grill I’m not sure it would be crispy enough to be enjoyable

    Hi,
    How to avoid sticking shell to shrimp after grilling?
    Thank you

      @Cujucuyo 3 года назад +1

      Overcooking it is the first mistake and alternatively if the shrimp is super fresh (i.e. just caught) and your running into this issue, make sure you put it in ice for an hour or two before cooking so that the meat will separate from the shell.

    Hey Andrew I live in San Francisco East Bay and I can get plenty of head-on shrimp but every time I buy them the meat is mushy which as you know is caused by being kept too long in the enzymes in the head turn the meat mushy. How to find the freshest head-on shrimp and avoid this problem. Buy them alive?😕

      I recommend fishermen direct purchase. Some farmers market here in Los Angeles on Saturday have straight out the water fish fair price and direct

    I clean my shrimp under running water. And I prefer to remove that vein in the belly . I know it's supposed to be a circulatory vein and not a digestive one, but I often find them filled with dark suspect matter.

    Andrew Zimmerman is his (Jewish) birth name. I wonder why he changed it to a more anglicized (Zimmern). Shame on you !
