No Knead Ciabatta Bread:
1⅔ cups (400g) lukewarm water
1½ tsp (9g) salt
2 tsp (7g) any dry yeast
3¼ cups (450g) strong bread flour (13% protein)
If your bread dough seems dry, don't be afraid to add an extra 2-3 tbsp of water.
Every flour absorbs liquids differently. We are looking for a sticky soft dough (check
video for visuals).

I made eight smaller ones and they turned out perfectly. I did cook them for 30 minutes and I could have cooked them a bit longer to get the perfect crunch but my smoke alarm was going off because of the parchment paper!

Oh absolutely!!! I LOVE any type of olive bread! 😍 Add the olives after the first stretch and fold and continue on with the recipe. Once you do the second and third set of stretch folds, you'll be able to incorporate them into the dough.
I’m glad I found her channel. I swear I have made more than one failed loaf of bread. Since following her methods and have made several yummy ones. My family is like don’t ever buy store bought bread again.

Hi Emma! Would this work with a gluten free flour and xanthan gum?
You won't get exactly the same result. Even the best gluten-free flours for bread making, which have a mixture of gums, will struggle to get the super open texture of ciabatta. However, just because it's not exactly the same, doesn't mean it won't be good. I would say - give the recipe a go and see what happens!
I sometimes eat ciabatta as well, Emma. If you had to pick one, which one would you choose; ciabatta or focaccia?
