    Tried to make a peanut butter once, from another recipe... the mixture came out far too dry, couldn't be worked. The genius-me from back then had a flash of insight; "well, the recipe says to use milk, so I'll just add a dash of milk in case I didn't calculate properly from ounces to grams". Welp, turns out, that one dash of milk just ANNIHILATED whatever consistency I might have had and the whole thing just melted to a goop. Never solidified, even after being left overnight. On the other hand, I had 'peanut butter and chocolate fudge spread' for my toast tomorrow. Moral; don't be afraid of mistakes, you might find something really darn tasty even from a failure!

    This is excellent fudge. I have made it twice already. If you are using Smucker's Natural Peanut Butter Creamy, I recommend 5 1/2 cups of unsifted powered sugar (instead of 4) because the peanut butter is rather runny (lots of oil). Advanced tip: 1 1/2 cups of peanut butter is the same as 1 jar of peanut butter that is 16 oz or 1 LB by weight (It is great to not have to measure the peanut butter). Tip #2: I buy the half-stick butter so the 1 1/4 of unsalted butter is especially easy to measure.

    • @lukeruppersburg140
      @lukeruppersburg140 2 года назад

    I want to add chocolate to this recipe (reese's are my favorite candy) at what point in the recipe would you recommend incorporating chocolate and what adjustments would I have to make? Or should I just treat it like fondue and dip it in chocolate?

      Jimmy's peanut farm was managed in a blind trust while he was President. These temporary owners did a really poor job with everything, Jimmy's once profitable farm lost money and nearly bankrupted both the farm and Jimmy.

They would buy left over chocolate easter bunnies and turn them into wonderful fudge....using Fluff...that stuff you use to make peanut butter and fluff sandwiches. I remember that it was very smooth and yummie, they also made peanut butter fudge as well. I'm not big on sweets either, but I think I would like to try this ! Thanks Chef John ! x-)

      Unsalted butter to me has a sweeter creamy taste, but besides the slight taste difference, by using unsalted, you can control how much salt is in the total recipe. Many recipes call for salt, but if there is butter or margarine in the recipe as well, I always use unsalted butter :)

    Brand new sub and first time comment here. First, you are hilarious. So great to watch a recipe and chuckle at the same time. Second, I believe this is the first fudge recipe that I've ever seen that adds peanut butter and butter to cook and doesnt cook the sugar mixture first. But wow, it looked so easy to do! And third, yes I will be gifting fudge for Christmas so I'll be trying this recipe first, and maybe replacing my own peanut butter fudge recipe! Happy spatulating!

Everyone likes this fudge, by the way. Because my wife prefers crunchy peanut butter, that's what I used, and it was great!
