I would still follow the technique. Actually starting it out at 500 for the first half hour keeps it more moist. It crisps the skin to hold the moisture in!
@@AChristianMeyer the turkey in the video was much smaller - just used to show how we do this in advance. Usually- we use an 18-20 pounder. That’s what we will be roasting tomorrow - using this method!!

I didn't soak in brine, but i use put salt and pepper hours ahead. Is that going to dry the meat? I am thinking 450F. 😊

When you put it in for 30 minutes at 500F, did you cover the turkey with foil?
No- let the skin brown.
How big was the turkey you used for the video? You never said. I am cooking a 17-18 pound turkey. Is that about what you used here?
