    Yesss !! This is exactly how I prepare my greens...however I use BADIA steak seasoning instead of black pepper. It's kinda spicy and chunky but it dissolves into the greens during the cooking process.

    I have a suggestion. If you're using good smoked meat. Skip the seasoning salt until after you add the smoke meat. He is right when he said you may wanna wait to add the salt because the smoke meat broth is salty on its own.

    Seems to me that "Soul Food" is Rural Southern Cooking, my parents were Scotch-Irish descent and grew up in the Ozarks, I can't tell you how many meals of what you all call "Soul Food" I ate while I was growing up, indeed up 'til the present time as well. Sure is good eating regardless of what you call it. I like Collards served up with hot buttermilk cornbread, lots of butter and some Molasses on them, with a big slice of Country Ham, some Grits also are nice on the plate too. Good cooking and good videos regardless if you call it "Soul Food" or something else. My Collards are just now getting real good, they seem to have a better flavor in the Fall when they have had to deal with a little frost. Try turnip greens in the early Spring when they are tender and sweet, they are wonderful with some fatback a plate full of grits and some hot buttermilk biscuits slathered in butter and Sorghum Molasses. Keep on cooking.

    • @weareone8990
      @weareone8990 8 лет назад +13

      its called soul food because the southern style of cooking of greens came with the arrival of African
      slaves to the southern colonies and the need to satisfy their hunger and
      provide food for their families.The
      slaves of the plantations were given the leftover food from the
      plantation kitchen. Some of this food consisted of the tops of turnips
      and other greens. Ham hocks and pig’s feet were also given to the
      slaves. Forced to create meals from these leftovers, they created the
      famous southern greens. The slave diet spread once slaves began to cook in the plantation kitchens resulting in present day southern cooking.

      I did this last year, along with his yams and dressing and my family was so satisfied. I normally don't cook with much seasoning but all of them had seconds and thirds and they usually don't eat a lot. LOL Watching the video again today so that I can remember what to do. You will enjoy!!!
